AROUND THE MOUNTAIN AND BACK AGAIN!

I'm reading the title of this blog with a grim smile....A LIFESTYLE! Maybe not yet! On the other hand I have been doing this for a year now without cheating much at all. This two week break from eating strictly LOW CARB has been a good but devastating break.

GOOD - I had a good time just celebrating and eating things that I normally crave and drool over. Was such fun to eat Kentucky fried chicken with my family. I did not just freely ate everything in front of me but ate some cookies and chocolates from time to time as a treat.

What really kicked my bud was the ginger cookies I baked and frosted with my kids. Oh! Oh! it was just so good and I found myself at every crave to just dig in and eat another one. The terrible thing about sugar it is grabs you by the neck and you fall into more cravings and feeling terrible and then it is a vicious cycle..... of craving and eating.

BAD - I have picked up 2kg in ten days! That is so hard to see. I reflect on how long it took me to loose that 2kg and it breaks my heart.

On the other hand I feel, yes I had a bit of a "break out" and I'm not going to stay there but coming back and going forward.

I want to reach my goal of weighing 65kg this year! It might take a while but I'm going for my goal.

THE BEST PLACE TO START:
-Reading the Atkins book again and going on strict INDUCTION for a week and then go from there.
-Making sure I eat enough protein and carbs. Keeping my carbs under 20g a day and my protein at about 70g a day. (not the grams on the food scale but actually the grams of protein within the protein itself).
-Drinking enough water - this is actually a tough one for me.
-Trying to incorporate more exercise into my day. I walk my son to school and back every day but I need more than that. I do good walking the dog. I have a walking route with him and aim for 3km plus a day.
-Being accountable on this blog and my facebook page. Nothing like to come and tell the truth on what I ate :D

I'm back on this blog the first of January again. Now you all know what I'm going to do the next few days ;) No! not eating CARBS and ginger cookies :) but reading the Atkins basics again and planning some menus and great food ideas. Preparing my heart and mind to do this! Pulling myself out of a sugar hole and getting into healthy eating!

COME ON JOIN ME! There is no hole to deep that you can not get out of!!!!!!!!!!!!

ALL ABOUT TODAY, CHRISTMAS UNTIL NEW YEAR!

THEN AND NOW!!!!!!!!!

I'm looking back today: Christmas last year I decided this is enough I'm going to loose 20kg this next year. Now it is almost a year ago and I have lost almost 17kg. I wish it was 20 but it just didn't come easy.....

It was a hard road for me. I think I was tested to my limits....... Also I had to decide if I will continue or just be at peace where I am and what I have accomplished. I would like to go on and reach my goal weight of 65kg come what will. It may take a while to get there but the new year is ahead and I'm taking it head on.

Tomorrow our family is going to take our holiday break from school and work. I'm also going to take a break from the blog and will be back the FIRST OF JANUARY to take the new year with stride.

I want to wish you a BLESSED CHRISTMAS and WONDERFUL WEIGHT LOSS NEW YEAR ahead!

Thank you for your encouragement and just being here on the blog and my facebook page. You feel like dear friends cheering me on. I could not have done it without your support.

MANY BLESSINGS see you on the FIRST OF THE NEW YEAR!

ALL ABOUT TODAY: 17 December

They always say that stress do not encourage weight loss. Wow I have been really experiencing loads of stress about my teenage daughters school for next year. It is also a good opportunity for me to learn to trust God knowing that He cares for us......
I have been very surprise knowing that in the past when I get stressed out like this..... I run to eat and nibble constantly on food.... I can see that I have grown in this area this last year. I am so grateful for that.........

BREAKFAST this morning was half a bun in a mug with half a tin of tuna with mayonnaise, coffee and cream.

Midd to late morning I had the other half of the bun in a mug with the tuna and topping.
With coffee and cream.

LUNCH was tomato circles with soft cheese as a topping, I was not that hungry as I had the bun in the mug late morning.

Midd afternoon I visited a friend and had carrot sticks with a cream cheese dip and a handful of nuts with coffee.

SUPPER is going to be out at an event. Before I'm going tonight  I am having a piece of chicken, a bit of broccoli, a few circles of cucumber and a bit of lettuce as I am not knowing what I would get at the event. I have to take a savory bread dish (off course not what I can eat from ;) I will probably not have anything to eat there as it is a potluck and salads are scarce at these places.

ALL ABOUT TODAY: 16 December

BREAKFAST was 2 left over boiled eggs from yesterday's family breakfast. I mashed it with mayonniase and made a salad. Coffee and cream.

Midd morning I had another boiled egg from the left overs (good they are done now :) Also had 1T of coconut oil.

LUNCH was 2 bowls of cauliflower soup, with bacon bits,  parmesan. Yes I made another batch. It is so good and filling and keeps me full. Added a T of grated cheese with a few strips of turkey ham. Lunch at its best!

Late afternoon I had a few cocktail chicken meatballs. Not sure what was in it but probably not all pure chicken. Also had another coffee with cream.

SUPPER was stir fried cabbage with bacon bits. A chicken thigh with mayonnaise and spicing. Cucumber and tomato circles for salad.

Amazing after yesterdays chocolate pig out I do not have sugar withdrawal today. Maybe I'm still running on the chocolate ;D

ALL ABOUT TODAY: 15 December

So this picture above is a good message for me today! My daughter gave me one of these chocolate chips boxes with the compartments....... 2 chips have have 4 carbs. So from time to time.... actually a long time ago last...... I take two when I feel like it. Well today I felt like it and something in me screamed: "IN TEN DAYS ITS CHRISTMAS!!!!!!" So I ate the whole thing!!!!!!!!!!........... Oh well!!!!!!! TOMORROW I go on again. I have been doing really good with no cheats for a long time......... That "TOM" etc.

BREAKFAST was the bun in a mug for me with two eggs mashed with mayonnaise on top.
Coffee and cream. I really enjoyed my breakfast and my family's waffles with strawberries and cream was not at all a problem ;)

We came back late afternoon from church and I ate a few peanuts in the car back home I was starving.

SUPPER was chicken pieces with moyonnaise and cucumber circles and a T of coconut oil.

AND THEN THE CHOCOLATE for Christmas ;D

Looking forward to this week and going strong eating Low Carb. I want to make sure this week that I eat about 100 grams of protein a day and keep my carbs under 20 net carbs. Also to make sure I keep my fats up. It is quite the art!

ALL ABOUT TODAY: 13 December

Just got home a bit ago. Was a long day.....

BREAKFAST was 2 eggs with feta cheese, coffee and cream.

Had someone over this morning and for lunch at our home..... for sure being busy helps keeping me from getting into trouble with CARBS ;)

LUNCH was 2 bowls of the Cauliflower, parmesan and bacon bits soup.

I had to attend an event at the Turkish school. I was asked to bring a massive bowl of popcorn and I knew there was not going to be anything low carb.

I ate a little bit of bulgur tomato and onion salad out of being a good "foreign citizen" if you know what I mean, my plate was dished for me and then I had to eat something.... I thought that the bulgur salad would be the least damage. At least I could skip the cakes etc.

SUPPER was out with my family and it was a difficult choice for me. I decided on 6 chicken wings. They were just fried without a coating.

Today was sure not the best Low Carb day. I think tomorrow I want to eat more vegetables and salads. My body is craving some vegetables. Now its too late here to get eating on what I missed out today ;) This time of year it is hard with all the functions going on to stay on track....... I'm doing my best to stay on track.

ALL ABOUT TODAY: 12 December

The scale is SOLIDLY STANDING...... but I'm persevering I'm not climbing in weight but not loosing either it is a bit up and then down.........!!!!!!!

BREAKFAST this morning was 1 egg fried in olive oil with a sprinkling of cheese and bacon bits.

1T of coconut oil midd morning and about 3 cups of coffee through the day.... WAY TOO MUCH!

LUNCH was the bun in a mug with flaxseed sliced in two with butter, marmite and cheese. Stir fried vegetables cabbage, broccoli and carrots.

Felt like an orange so I had little pieces of orange peel about 2T.

SUPPER was a chicken piece with mayonnaise and broccoli.

Not such an exciting day food wise but we had people over and I had to host and had to prevent myself from eating the absolutely divine Korean noodles ETC!!!!!!!;D

Wednesday, December 11, 2013

ALL ABOUT TODAY: 11 December

BREAKFAST this morning was a 2 egg omelette in the microwave with a bit of ground chicken left over from supper last night, tomato, cucumber, sprinkle of cheese.... COFFEE AND CREAM!

Mid morning I had cucumber, red cabbage and carrot spears dipped into a ranch dressing for a snack.

And today I had way toooooo much coffee about 4 mugs! It is bitter cold and snowing very unusual for our city.

LUNCH was 3 bowls of cauliflower, green onion, bacon bits, onion, garlic, and parmesan soup. Was so delicious.

Had a T of coconut oil midd afternoon.

SUPPER was 4 miniature hamburger patties with eggplant baked in the oven with olive oil and lettuce as the crunch salad.

Looking back today I did great on the carbs not so much fat and I think too little protein so supper was more heavier on protein.

Tuesday, December 10, 2013

ALL ABOUT TODAY: 10 December

This is probably often how we feel after a CHEAT MEAL!!!!!!! ;D

Today I started looking more into the food that I eat and how much protein it has. All my proteins today came to 123g. For me to be able to loose the kilograms I have to keep my proteins under 110g and my carb count under 20g. I do not count my carbs because I try to eat as little of it as I can. I was surprised today when I looked up some innocent vegetables like eggplant that has 6 carbs for one cup...... that is high. I think like we all know the secret is to keep full with the low carb vegetables like cucumber, lettuce, cabbage, broccoli, green beans etc. Not my favorite but hey there is always a price to pay to look good ;)

BREAKFAST was half an avocado pear with a tin of tuna and mayonnaise.

LUNCH was with a group of friends at our home. I turned out to eat shredded cucumber with spicy sausage chopped into my salad dressed with mayonnaise. Won't say what everyone else had......

Midd afternoon I had 2T of coconut oil and 1 1/2T of grated cheese for a snack.

I had a chicken fillet late afternoon with a bit of butter.

SUPPER is going to be mexican food  with salad and tortillas for my family. As I had my chicken late afternoon I just made up a salad of lettuce, tomato, cucumber, ghurkins and a slight sprinkle of feta cheese for me.

The little bits of that and this the last while is not helping my weight to come down. Making a new commitment to try to loose some more weight before Christmas but first getting back to where I was.........

I'm not doing too well exercising. It is not something I really enjoy doing... it comes purely out of discipline. The weather is cold and rainy outside..... I know the excuses can go on and on. I made peace that in the winter I play polar bear and stay inside...... ;D

Monday, December 9, 2013

ALL ABOUT TODAY: 9 December

Just got home!

Today was a full BLUE MONDAY in every color. I am a home schooling mom...... today was a hard day and I must say after many years of home schooling I was ready today to throw in the towel....... Tomorrow morning the sun comes up again! ;D

I just saw a new side of my eating..... Out of frustration today I just grabbed a chocolate cookie and ate half of it..... Wow food is for sure a comfort for me..... I have a long way to go still...... As I always say a good time to look at where I have come from.....

BREAKFAST was two eggs with feta cheese, tomato, cucumber, coffee and cream.

LUNCH was half an avocado pear with salt and pepper, 2 Turkish ground meat kebabs left overs from the barbeque yesterday and a bit of chicken with salad and mayonnaise.

I had a bit of beef jerky a friend dropped off here cleaning out their pantry leaving..... I just love that stuff!

SUPPER was a bit of a mixup. I attended a ladies event and had to take something. It is really hard taking something low carb with for a crowd and stay within budget. I had to make the best of what ever food was there and stay with Low Carb eating....I had a few stuffed mushrooms, carrot, cucumber and pepper sticks dipped into ranch dressing and a decaf coffee with peppermint cream. Was a big treat.

Today counting my proteins  by grams still seemed very confusing as different websites have different numbers. I wrote out a list of proteins I eat regularly and hoping tomorrow to get more into the go of things.

Sunday, December 8, 2013

ALL ABOUT TODAY: 8 December

BREAKFAST on this lovely Sunday was earlier than what I have planned...... THE DOG wanted to go out and Mama Bear got up and then just stayed up...

I made 2 scrambled eggs with spinach, cheese, coffee and cream.

I had two more little cups of coffee and cream through the morning.

LUNCH was 2 bowls of the chicken, mushroom and eggplant soup, leftover from earlier this week. Now its done! This is one problem with a pot of Low carb soup.... I HAVE TO EAT IT ALL my family is not much into soup.

SUPPER was midd afternoon a lovely barbeque as a family. I had a chicken fillet and one Turkish ground meat kebab with oven roasted cauliflower, olive oil and garlic. Enjoyed some tomato, cucumber and ghurkin salad.

Had a low carb hot chocolate late afternoon. Was so yum in this cold weather.

Was a good day food wise. I'm looking forward to see what the scale will say tomorrow morning. I have had some time this weekend to read up more about the art of Low Carb eating and weight loss. I think I might eat too much protein at a time. Most sites says to eat 6 ounces/170g of protein a day. I have a little kitchen scale will be looking into this tomorrow.

ALL ABOUT TODAY: 7 Decemer

Just got home after a total THANKSGIVING meal today! Food was everywhere and the desserts to die for!  ;D

BREAKFAST was half an avocado pear with salt and pepper. Coffee and I had cream! I had two fried eggs with cheese.

At my friends house late morning there were deviled stuffed egg and I enjoyed a few fully. I also had a few raw green beans I was getting it ready to put in a dish.  I was  getting hungry and the other treats really was tempting so I thought the beans would be a good high fiber filling snack. I had another coffee late morning.

LUNCH AND SUPPER was at about 3 in the afternoon. I had a scoop coleslaw, a t of cranberry jam, green salad with tomato and cucumber with lots of lettuce, turkey slices and a bit of chicken, a bit of beet. I can say honestly I had no dessert. Wow it was my favorites out there apple pie, pumpkin pie, cheesecake, chocolate mousse cake etc.

I had whipped cream in my coffee and slowly sat enjoying every sip. Afterwards found out that the whip cream had a bit of sugar in it..... hoping that it will not make too much of an influence on my weight.

It was difficult being with some of my favorite people in the world enjoying great food together..... I was so tempted. I realized how much of a social eater I am! Also it was so freeing to not enjoy the high carb food and desserts and enjoy my meal anyway. I have so much hope for the Low Carb way of eating becoming a lifestyle for me...... yes it is not easy but possible!

ALL ABOUT TODAY: 6 December

I have lost another 500g hoping to break my lowest point tomorrow morning. It would just be great!
I really miss cheese and a dot of cream in my coffee. I am just again convinced about the the reality of Low Carb - it does work if you stick to the basics....... AND THIS IS A LESSON FOR ME!

Talking about it: Our family is going to visit friends tomorrow to attend their Thanksgiving Celebration....... MHAW here was asked to bring a chocolate mousse cake and starters...... Oh wow! I would have to have a really good breakfast to keep me going until the turkey meal AND pumpkin pie and cheese cake - and my friend knows about baking those.....  I'm going to do my best to stay LOW CARB!

BREAKFAST today was a treat from my daughter she made me a two egg omelette wrapped in lettuce leafs and off course COFFEE.

Midd morning I had half an avocado with salt and lots of black pepper.

Had a small cup of coffee again late morning.

LUNCH was 2 bowls of left over Chicken Vegetable soup from last night. Was so good. Had a few sliced of tomato and cucumber.

Was out all afternoon so I didn't get into any food trouble :)

SUPPER was a piece of chicken with lots of mayo and stir fried broccoli.

Thursday, December 5, 2013

ALL ABOUT TODAY: 5 December

TO EAT ALIVE! This is my son and his cute dog!

Nothing fancy on the scale but still cutting out cheese and all dairy.

BREAKFAST was 2 eggs with cucumber circles and coffee.

Midd morning I had half an avocado with salt and pepper with about 4 big lettuce leafs.

LUNCH was left over stir fried cauliflower from last night heated up in a pan with a tin of tuna. Was so good.

I had a Low Carb hot chocolate: 1T cacao powder, 1t coffee creamer(couldnt find anything about dairy on the container) and hot water. Wasnt so nice but atleast satisfying.

SUPPER will be a thick vegetable chicken soup. I went to the local fruit and vegetable bazaar and got the nicest vegetables. I added in the soup a chicken breast, onion mushrooms, green peppers, cauliflower and chopped eggplant with 3 chicken stock cubes. It smells divine! Will probably have two bowls of this. ;)

I find myself constantly looking for something to eat. The weather is really cold today I don't think a really cold house helps either with not having an appetite.

ALL ABOUT TODAY: 4 December

Was down a kilogram on the scale this morning! I'm not getting to excited about this because it is the naughty kilogram I picked up over the last two weeks. I will get excited once it drops under my hanging lowest point of 69.8! Aiming for that this week.
Cutting out all dairy and cutting back on coffee only 3 mini mugs of coffee a day!

BREAKFAST was 2 eggs fried with slices of cucumber on the side.

Midd morning I had 1T of coconut oil, half an avocado pear and 1 hamburger patty.

LUNCH was a small chicken fillet with broccoli.

Had 1T of coconut oil for a lovely snack midd afternoon :)

I got a great walk in today looking for Christmas material.

SUPPER will be fried cauliflower with lots of garlic topped off with Spagetti Bolognaise tomato meat sauce.

Tomorrow morning on the scale will really tell if cheese an cream was holding me back.

Tuesday, December 3, 2013

ALL ABOUT TODAY: 3 December

HHMMMMMM not a good day on the scale...... I was up and not coming down..... I have been looking over the last few days on what I have eaten. I think some carbs creeped in. The pickles in the salad last night had SUGAR in them..... I think I have been enjoying tooooo many coffees with CREAM...... Maybe my portions is just to big...I'm definitely not eating not enough. Rather the other way around ;)

So today is back to basics. I'm cutting out all dairy for a week and see if that makes a difference. Also cutting back on coffee and just enjoying hot water in a mug (I do not have a love relationship with herbal teas).

BREAKFAST was 2 eggs fried with tomato and cucumber slices on the side. JUST COFFEE!

I had half an avocado pear with salt and pepper and 1T of coconut oil midd morning of and half a hamburger  meat patti.

LUNCH was delightfully different. I stir fried onion and mushroom and stirred in a tin of tuna. WAs very filling and kept me full for hours.

We had an event at our home.... I stayed strong and only had only half a mug of coffee.

SUPPER was a chicken fillet topped with red pepper flake spicing and mayonnaise with a mixed salad.

Had 1T of coconut oil for dessert :)

Hoping to see a breakthrough before CHRISTMAS!!!!!!!!!!!

Woooooo I really missed the cream in my coffee today..... AND CHEESE! Hoping to see a difference on the scale tomorrow morning.

ALL ABOUT TODAY: 2 December

A real MONDAY!

BREAKFAST was 2 fried eggs with feta cheese and cucumber, coffee and cream.

Midd morning was half an avocado with salt and pepper, 1T of coconut oil

LUNCH was a hearty chicken soup, was not enough..... I had 3 Turkish kebabs with mayonnaise. I cleaned the house and needed all the help I could get so I had 2 cubes of dark chocolate.

Some more coffee and cream midd afternoon.

SUPPER was a meal with guests. I made chinese noodles with chicken, broccoli and peanuts. Realized at the end it was not going to work for me to pick out what I can eat from the meal. I got up from the table and cooked 3 Turkish kebabs and enjoyed it with the mix salad on the table and baked eggplant circles. Turned out to be a good meal for me too.

Sunday, December 1, 2013

ALL ABOUT TODAY: 1 December

Hmf the conversation in the car on the way to church this morning ended in my husband commenting and asking if I have gained some weight?????????? You can imagine my response....... :D Anyway I did not gain just fluctuating up to a kilogram up and down. Tomorrow morning will be the big test!!!!!!! I must add that I have been craving all the great food, cake and pies laying around....... Making a choice to stand strong and keep my goal of loosing some more weight in sight.....

BREAKFAST was the bun in a mug without the flaxseed with 2 fried eggs topped off with cheese, coffee and cream. Was such a satisfying breakfast. Loved it.

We got home at 16h30 this afternoon. There were great snacks available at church but off course nothing good for Low Carb. I did have a glass of Turkish tea to help me through.

SUPPER was left over turkey meat strips with mayonnaise and and the cauliflower mock potato salad. It is really cold outside and I might just go and make myself the Low Carb Hot chocolate for a treat.

Wow I do find it hard during this season to avoid eating all the great food laying around. At every place and event there is HIGH CARB AND SUGARY things. I have to keep reminding myself that I made a choice to push through until I weigh 65 kilogram.

May you have a great week loosing weight. Know that you are not alone in your battle being tempted by everything great and wonderful. Stay strong.  x x x

ALL ABOUT TODAY: 30 November

What a day! In some way I feel so free and happy that in a world of carbs I can live and eat low carb and feel that I'm not compromising what I feel is right to eat. That I can eat a bit of carbs and go on with my life.

BREAKFAST was 2 eggs with a sprinkle of cheese with coffee and cream.

LUNCH was at a Christmas event at our church. I had a bit of hummus with carrots and cucumber sticks. Coffee with a touch of milk. I knew supper was going to be a challenge so I tried to eat less for lunch.

SUPPER was a Thanksgiving meal our family attended. I had a good helping of turkey, 1t of applesauce mixed with cranberry sauce. I had broccoli in a wee bit of white sauce and cheese, cauliflower mocked potato salad. I decided to have a tiny sliver of Pumpkin Pie (I scooped out the pumpkin from out of the bit of crust) about 2 tablespoons. It was so good. Coffee afterwards with a tiny bit of milk.

Tomorrow life goes on with strict Low Carb..........

Friday, November 29, 2013

ALL ABOUT TODAY: 29 November

MINDLESS NIBBLING........  If I could jump up high enough in the air and be able to kick myself a good kick in the bud.... I think I would have done it!!!!!!!!!!!!! Yesterday I had about half a cup of mindless nibbling one by one of PEANUTS...... I thought ahhhhhhwww it's protein.....it would not harm!!!!!!!!! Yes it does!!!!!!!!! Peanuts are quite high in carbs too...... and then from a few days ago the bun in a mug with melted chocolate for a treat adds another few grams......So this morning the damage from a week ago is almost 1.5kg heavier!!!!!!!!!

So today this mamma is back to basics...... Just wanna make me cry......

BREAKFAST was 2 eggs with the bun in a mug without the flaxseed, coffee and cream.
Had another 2 cups of coffee in the morning :D

LUNCH was cucumber circles with a tin of tuna, mayonnaise and a sprinkle of cheese. I made stacks on the cucumber like sandwiches. Was really nice.

Midd afternoon another coffee with a friend.
Had 2T of coconut oil.

SUPPER is going to be 3 ground meat kebabs with broccoli and cauliflower with a touch of mayonnaise. Will try not to drool on my family's pizza ;)

Hoping to see some coming down on the scale tomorrow morning.

Seeing the scale go up after a few of this and that back into the world of carbs make my heart goes jumping...... I realize that I'm really sensitive to Carbs and sugar. I would have to make peace that that is how it is and if I want to loose more and stay the weight I am aiming for I would have to pull out my CARB TEETH......

Thursday, November 28, 2013

ALL ABOUT TODAY: 28 November

I was thinking about all the great meals that everyone is enjoying today.....it was a normal school day here.  Quite an anti climax for our family..... we were invited to enjoy a THANKSGIVING celebration with dear American friends today. Their kids got a serious virus and we decided to change the date a week later.

I love turkey and pumpkin pie!  Maybe better we did not go...... I have a few celebrations coming up the next few days and off course it all has FOOD included.

The new bun in a mug tasted great yesterday but the carb count was HIGH..... I was up on the scale this morning........ hoping to come down again soon. I worked out the whole bun with melted dark chocolate and cream had about 7 net carbs. I was thinking if I only have half of that at a time it will not kick my insulin and cause weight gain.

BREAKFAST was 2 eggs this morning with a bit of left over tuna salad from last night. Coffee and cream.

I had 1T of peanut butter midd morning for a snack.

LUNCH was 3 beef fingers like kebabs with cucumber, tomato and a bit of cheese.

I went to our local fruit and vegetable bazaar in our neighborhood to get vegetables for the week.  I  bought the kids some salted peanuts and being a good mother set it out in a bowl on the kitchen counter......... AS I WAS WORKING IN THE KITCHEN I kept nibbling........not a good thing ;)  Oh well I packed it in a jar and told the kids to enjoy the peanuts :)

SUPPER is a THANKSGIVING treat to our family tonight as the kids feel very disappointed that our family's thanksgiving meal with our friends didn't work out today.
I am going to have chicken, broccoli and a tiny bit of baked pumpkin in the oven for our event tonight and no dessert!!!!!!!! ;)

ALL ABOUT TODAY: 27 November

Here is the NEW BUN IN A MUG:

RECIPE:  3T ground almond flour, 1 egg, 1/2t baking powder, 2T olive oil. Mix with a fork in a mug and bake in microwave for 1 minute on 100%. I took two cubes of 80% dark chocolate and melted in on the bun halves in the microwave. Spread it over the bun and topped with cream and a touch of chocolate sprinkles. It was absolutely yummy!

Happy for a more calmer day.

BREAKFAST was two eggs with a sprinkle of cheese, coffee and cream.

Midd morning I had 1T of coconut oil and then my daughter and I got into the salted seaweed (nori sheets) had a few sheets just clean.

LUNCH was a small chicken fillet cooked in the microwave with mayonnaise and cucumber slices for salad.

Midd afternoon I really felt like a sweet chocolate treat! I decided to try out the bun in a mug without the flaxseed and then melt a cube of dark chocolate on each half of the bun topped of with cream.!!!!!!!! WOW IT WAS GREAT!!!!!! I can't eat it every day but once a week would be great for sure. For a woman that have not had cake for almost a year this TREAT was just awesome!!!!!! ;)

SUPPER will be tuna salad with tomato, cucumber, cheese cubes, pickled cucumber cubes wrapped up in lettuce leafs dressed with mayonnaise.  And then supper came along and I also had a few eggplant circles based with olive oil baked in the oven.

ALL ABOUT TODAY: 26 November

I left home early this morning and got home at 17h00 this afternoon.  I left early and ate 2 pieces of cold meat with a bit of cheese as the breakfast event was only at ten and I knew I would not make it until then.

BREAKFAST was  tomato, cucumber, feta cheese and a slice normal cheese, olives and a bit of scramble egg.  Oeeeeee all the tempting carb breakfast good was heavy on the table. I had to fight my way through to find the Low carb stuff ;)

For LUNCH there was a bunch of cake, bread stuff and high carb WHATEVERS I just then stayed without ..... I had coffee with cream. I must say the Swiss chocolate this afternoon at a meeting was the biggest problem. I stayed strong and enjoyed my coffee ;)

SUPPER was eggplant slices baked in the oven with olive oil, 3 hamburger patties with a squirt of olive oil.  I was starving when I got home after only a bit of breakfast good this morning.

I don't think I had enough to eat today but at least I stayed out of trouble with A LOT OF TEMPTATIONS.

As the weather is cold I keep forgetting to drink water. I know it is important for weight loss. I think I should drink a glass of water before every cup of coffee. This will keep me drinking water for sure.

ALL ABOUT TODAY: 25 November

Want to eat the whole house today! The cooler weather is for sure working on working an appetite for me. I'm holding on for dear life to the 500g I have lost last week. Normally after a loss I go picking up some and loosing it and so on....... I WANT TO LOOSE MORE SOOOOOOOOOON!  ;D

We were invited to a THANKSGIVING party on Thursday but it got cancelled as my friend's kids have "mouth and foot" disease. I to be honest was looking forward to the great Turkey but I was nervous about all the other food there too. I just love pumpkin pie with lost of cream!

This time of year it is hard for me not to just eat for the sake because it is "this time of year". I need to keep my mind together telling myself: "NOW STAY CLEAR.... THINK BEFORE YOU EAT!!!!!" ;D It is easy just to eat because it is Thanksgiving or almost Christmas. I have not been on a Low Carb Lifestyle for Thanksgiving and Christmas yet. ALL ABOUT TODAY: 24 November

I could not believe it this morning when I got on the scale and saw that I was 69.8kg!!!!! I was hoping to break 70kg and it really took a long time to get here...... SO HAPPY! Now I'm down 16.2kg!!!!!!!!! This week I have lost 500g! So grateful.

BREAKFAST this morning was a treat from my daughter. Was a 2 egg omelette with spinach and spicy sausage  with a sprinkle of cheese. Coffee and cream.

We came back from church at around 4 this afternoon so we had a mixture between lunch and supper:

I made the bun in a mug without the flaxseed and more almond flour. Sliced it open into two. Ate it with tomato, cucumber, mayonnaise and chicken stacked as a open sandwich. Was so filling and really tasted great.

RECIPE FOR:  The Almond flour bun in a mug

3T ground almond
2T olive oil
1/2t baking powder
1 egg

-Mix together in a mug and cook in the microwave for 1 minute on high.
-Let it sit for about 10 minutes before eating.
-Slice open and enjoy with a filling.

Will do 15 minutes on the elliptical walker tonight!!!!!!
Want to drink more water this week. I have been drinking more coffee and not enough water.

I was lazy today with food. My family had pizza left over from last night and and and and and.... I was so tempted with the chocolate brownies hanging around .... I could smell it a mile away. I kept telling myself NO NOA NOA NOA you have come to far to fall for one cheat like that...IT WILL TAKE YOU TWO WEEKS TO GET OVER IT ;)

Planning to do 15 minutes on the elliptical walker tonight!!!!!!!! x x x x

ALL ABOUT TODAY: 21 November

Yesterday morning when I got on the scale I was at my lowest point of 70.3 and I had high hopes that this morning I could drop past 70kg! Well life in the fast lane ;D I was shockingly almost a kilogram heavier this morning than yesterday.......... I realize our bodies are much more complicated than we think. I'm not quitting I'm going for the goal!!!!!!

I did then do 10 minutes last night on the elliptic walker.... I was aiming for 11 minutes but just did not have the energy. Soooooooo tonight I'm going for 12 minutes!!!!!

BREAKFAST this morning was a bit different I had Greek salad! I had cucumber and tomato salad with feta cheese. Coffee and cream.

Midd morning I had a t of home made peanut butter and 2T of coconut oil. I keep my coconut oil in the fridge and then with a knife break pieces off. The first time I ate it like this I thought I was not going to survive. Honestly this morning I did not blink an eye. It is getting easier.

LUNCH was Chinese cauliflower rice stir fried. I had two eggs and a green pepper stir fried with the cauliflower rice.

Midd afternoon a great coffee with cream.

SUPPER is going to be sardines baked in the oven with left over chinese stir fried cauliflower rice, tomato and onion salad. 2T of pumpkin sprinkled with cinnamon and olive oil baked in the oven.

I went to the local fruit and vegetable pazar this afternoon and bought the sardines like a real local. I am craving bacon.......... and I thought this could fill its place as a treat. Was quite a workout to clean them but hey I hope the taste will make up for the workout.

ALL ABOUT TODAY: 20 November

I had to come and tell..... I did ten minutes last night on the elliptic walker :D and I survived it ;)

Late morning I made the bun in a mug and had half of it with tuna and 3 cocktail hot dogs.

LUNCH was the other half of the bun in a mug with tuna and salad. I tried to eat more this morning and lunch time as I was going out for the afternoon with a friend to the big bazaar in the city.

We had tea at a cute place in the heart of the pazar was very tempted with turkish delight..... but no I did not have any.

SUPPER was a chicken fillet stir fried in butter with broccoli and bacon bits. I had cucumber and tomato salad with gherkins sliced up.

Going to try to do 11 minutes tonight on the elliptic walker.

I'm coming down in weight hoping to see myself breaking into the sixties tomorrow!

ALL ABOUT TODAY: 19 November

Supper tonight:  Zucchini noodles fried in olive oil and garlic with Turkish ground meat fingers.

BREAKFAST was 2 boiled eggs with mayo, coffee and cream. Had extra coffee this morning as the weather is so cold and I'm freezing. I should drink more herbal teas but cant get myself to drink tea instead of coffee ;)

LUNCH  was the left over chicken curry and cauliflower rice with tomato and cucumber salad. I was starving and what a treat it was.

We had an event at our house and I served stuffed eggs (like deviled eggs). Off course I had some too ;)

SUPPER was zucchini noodles fried in olive oil and garlic with Turkish meat sticks.

My coconut oil chocolates are done now. I need to make a new batch. I had two cubes of dark chocolate for dessert.

I read something very interesting on a Low Carb site yesterday. Even drinking too much coffee because of the caffeine can influence insulin and then weight gain........ At this point with home schooling and cold weather I'm having a few strong cups of coffee a day..... possibly a few cups tooooooo many ;)

I know if I write it here I will do it because it keeps me accountable: "I'M GOING ON THE ELYPTICAL WALKER FOR 15 MINUTES TONIGHT!" So if you do not hear from me again you know that I didn't make it :D

ALL ABOUT TODAY: 18 November

SUPPER TONIGHT:    Cauliflower rice with Chicken Curry!!!!!!

BREAKFAST this morning was 2 eggs, sprinkle of cheese, tomato and cucumber. Coffee and cream.

The weather is COLD so I find myself constantly looking for something to EAT! I had 3 coconut chocolates today - keeping me out of the rusks I baked for my family today and the apple cinnamon cake my neighbor send over ;)

LUNCH was a big bowl of pumpkin soup with a sprinkle of cheese.

Coffee and cream midd afternoon with 3 cocktail hot dogs, 1T of tuna and mayonnaise.

SUPPER was early the chicken curry with cauliflower rice. I had a small tomato and chopped green onion with this.

I find if I eat like SUPPPER AT 4 in the afternoon I eat less.... normally late afternoon is when I'm at my most hungry and get into trouble and want to eat all kinds of CARBS! I'm not a late night snacker so just a nice cup of hot herbal tea will be fine until bedtime.

ALL ABOUT TODAY: 17 November

BREAKFAST was scones with cream and jam FOR MY FAMILY..... Mama bear had a bun in a mug and sliced it like a scone ;) I had butter, cheese and tuna on my "scone" with coffee and cream. Missed having jam but the carb count here on the diabetic jam is so high....... I just live without it.......

LUNCH AND SUPPER was together as we left home for church at 11 and got home at four this afternoon. I was starving.....

I made a container of chicken livers!!!!!! I know!!!!!!! I was shocked on high cheap they were and how much protein they have AND LOW IN CARBS!!!!! I fried some onion add the livers with a touch of barbeque salt and a T of balsamic vinegar. WASNT STEAK but it was good. My family had their noses up in the air enjoying their pizza ;) I had a bit of tomato and lots of lettuce with the livers. Was telling my family that they should smile I'm being economic and looking stunning at the same time and that eating chicken livers.  ;D

Had two cubes of dark peppermint chocolate for dessert. I always try to keep my obvious carb choices like chocolate under 5g net carbs at a time. Then it does not kick my blood sugar and insulin to get going.

Normally in winter I love to eat lots of vegetables in soup, stir fried, stewed etc. Interesting I have totally lost my taste for veggies.... Going to work this week on getting more low carb vegetables into my diet.

ALL ABOUT TODAY: 16 November

Good I have a scale to weigh me on....... I feel so JUST FAT today! No reason, no weight gain just feeling like it.....  actually I was past my lowest point on the scale this morning..... just 100g but hey it was past :) Hoping to see more on the scale tomorrow morning..... DOWN!

I weighed myself on a scale standing for sale in a store today. It was being sold for an amazing price....... UNTIL I weighed myself on it: 49kg!!!!! and then I understood why it was being sold for such a GRAND PRICE!!!!!! I was very tempted to bring it home and use it as my new measuring of how much I weigh ;D It felt much better than the actual 70.3kg my scale is weighing me now ;)

BREAKFAST was a big treat this morning. Dear friends and I met at Ikea for a birthday get together. I had an omelette with cheese and tomato and the normal Turkish breakfast plate of cucumber, feta cheese, tomato slices and olives. With great coffee off course. Was such a blessing.

LUNCH was out too!!!!!! A dear lady living here in our city invited our family over for a meal of fish. She fried the sardines in a pan. It was dusted with flour but the best fish I had in a long time. I had to take a salad and dessert. I made sure there was a big salad with lots of lettuce, cucumber, feta cheese, cucumber strips and olives. I had two big helpings of the salad to skip the potato and devine bread that was served alongside the meal.  I also had a serving of broccoli and cauliflower served with lemon and olive oil. Wow I really had to please explain about not eating dessert.....

SUPPER was skipped as I think I all ready had tooooooo much to eat today. Was a great food day...... OUT!

ALL ABOUT TODAY: 12 November

Remember how hard or how tough the journey going down the path of Low Carb might be..... YOU ARE NEVER ALONE!

The last few days have been a total crazy time. I'm so busy doing home schooling and having a house guest from South Africa visiting us.....

BREAKFAST this morning was on  the run half a tin of tuna mixed with a few tablespoons of cream cheese. Coffee and cream.

Midd morning I had a coconut oil chocolate.

LUNCH was filled baked potatoes for my family and our guest. I had the bun in a mug sliced open into two pieces topped with tomato, cucumber, ranch dressing and sprinkle of cheese and a few cubes of chicken about 2T.

Midd afternoon we went to an event where a dear friend had prepared baked apples (made specially one for me without cinnamon and sugar) with cream to bless me for my birthday...... I ate the tiniest of the baked apples with a drizzle of cream with coffee.

SUPPER was tuna pie made with eggs, cream, tuna and a sprinkle of cheese. Had eggplant boats stuffed with onion, tomato, garlic and grated cheese baked in the oven. Mixed tomato and cucumber salad.

Had a coconut oil chocolate for dessert as my family were packing out chocolate...... ;)

The baked apple has totally kicked my tastebuds... I'm hunting sugar now. Oh I hope the coconut oil chocolate will kick my out of it.

ALL ABOUT TODAY: 11 November

I am craving sweet today..... Hmmmm wondering if the kentucky salad that I had on Saturday is working its way. Oh well it was great and delicious and I felt spoilt for my birthday. I was hoping that I could be a clean cut 70kg on the scale today. No it didn't happen.... Kentucky kicked my bud :) I'm almost there and hoping it will be this week.

Shoooo but weight loss is a struggle now that I'm closer to my goal weight. It takes all out perseverance.

BREAKFAST was 2 eggs with half a tin of tuna, tomato and mayonnaise. Coffee and cream on the side.

Midd morning I had a coconut oil chocolate. I must say the longer I eat them the better they start to taste ;)

LUNCH was 3 pieces of turkey ham rolled up with 4 of the stuffed mushrooms that I made last night.

Midd afternoon I had some celery sticks with cream cheese.

SUPPER was chicken that was marinated and baked in lemon and soy sauce. Cauliflower potato mock salad and steamed broccoli.

My family really enjoyed eating the birthday cake my sweet daughter made me :)

ALL ABOUT TODAY: 10 November

This was supper tonight. Stuffed mushroom with mock potato salad, tomato and snipped green onion.

BREAKFAST  I got up early and had half a cup of tuna salad left over from yesterday. Our family had a late morning breakfast before we left for church. Breakfast was a big treat made for me by my sweet family. It was a omelette with cheese, tomato, cucumber on the side coffee and cream.

We came back late afternoon and I got going with making supper. I was starving and had 2 pieces of turkey ham rolled up with a bit of cream cheese inside and lots of lettuce.

SUPPER was these stuffed mushrooms for me. Was a lovely treat. I took out the stems and broke them in tiny pieces. Used about 3T of ground beef mixed with onion, ketchup, Italian herbs, garlic and black pepper for about 10 mushrooms. Mixed it all well with the mushroom stems, stacked it tightly into the mushrooms and grated cheese over. Baked in the oven until the cheese was melted and brown.  Was a great supper. At least I was not drooling over my family's mince pies. ;)

ALL ABOUT TODAY: 9 November

We had a lovely day as a family at the Zoo celebrating my birthday coming up! There were no temptations with food :) The olive crackers my kids enjoyed didn't look to bad THOUGH ;) But afterwards....

BREAKFAST was 2 egg and cheese omelette with a bit of spicy sausage, coffee and cream. I knew we would eat later in the day so I had more for breakfast.

LUNCH was midd afternoon and I enjoyed a lovely Kentucky chicken salad...... I thought hey its for my birthday.... THEN afterwards I had a handful of dark chocolate covered almonds for dessert. I thought if I had to choose a treat that was a good choice.

I got a good load of exercise walking the Zoo grounds today. Hope it counts on the scale  this week ;)

SUPPER was 1 cup of tuna salad with mayonnaise and chopped lettuce. Didn't feel like eating but I knew I had to eat something or I would have eaten too little for today.

I remembered last time we went to the Zoo was Spring this year..... I was about 10kg heavier than I am now. I smiled thinking YES!!!!!!

ALL ABOUT TODAY: 8 November

I use to prefer candy above chocolate.... Now I fall for chocolate! I never knew that sugar could be so addicting until I tried to drop it and not eat it..... Oh wow it took me months to get over it. What even shocked me most is how long it takes my body to get over eating sugar as a cheat and  then start loosing weight again. It is different for every person but for me up to 14 days before the needle on the scale starts coming down again. Even diet pepsi and artificial sugar kicks my insulin in..... Before I do decide to fall for sugar I try to remember the terrible feeling and slumb I go into after I ate it... and then how long it will take me to pick up where I was. Accountability is a great place to be!  Really being accountable to friends here on this page and the facebook page helps me to think twice before I eat something.

BREAKFAST was two eggs with a sprinkle of cheese, tomato and onion with coffee and cream.

Had another coffee mid morning with a coconut oil choc.

LUNCH was a bread in a mug with marmite, cheese and lots of butter yum! I had lettuce, cucumber and ghurkins on the side for salad.

Midd afternoon cleaning the house I ate another coconut choc and half of an eggplant boat I made earlier this week.

SUPPER is going to be a chicken fillet with parmesan cheese, spicing and mayonnaise with a green salad on the side. Its Friday evening I don't feel like cooking vegetables. So happy salad can make up for that. My family is having pizza ;) Staying strong here!
