ALL ABOUT TODAY: 31 May



Was a very productive day at home! Since we moved to our new home this was our first weekend just being home. I worked in the garden, sewed a tablecloth for a friend leaving the country and made this table runner from my husband's old jeans, made cinnamon rolls for my family and enchiladas for supper.   GOING TO BED EARLY TONIGHT :D

BREAKFAST was a very late morning 2 egg omelette with cheese. Coffee and cream.

I had another mug of coffee mid morning.

LUNCH AND SUPPER was together. Hey! It's weekend. This mamma was busy doing other things and food was last on my list. I made zucchini noodles stir fried in butter and garlic with red pepper and chicken. I added mayonnaise, lots of black pepper and a bit of ranch dressing. Was so delicious!

Didn't get out to walk at all but had a good workout in the garden.
Had about a liter of water and the jar is filled for the second liter. Probably by bedtime it would be done.

ALL ABOUT TODAY: 30 MAY


Was down another 100g this morning..... I know not toooooo much but it brings my lost this week to 900g..... every 100g counts ;)

BREAKFAST was one of those experiences that turned out not the way it was planned. I ended up in my pajamas overseeing an exam. Good it was at my home! I then got served breakfast 2 eggs fried in butter with grated cheese and a side salad of cucumber, tomato and crumbs of blue cheese on a polka dot tray. Coffee and cream.

Midd morning I made sure I got my mug of coffee blended with 2T of coconut oil. I also had 2T of tuna.

LUNCH was on the run 3 cups of shredded lettuce with olive oil and one and a half hotdogs chopped on top. Not the most exciting lunch but it filled my stomach.

I went to the city basaar with two friends and had a Turkish coffee there. Normally they add a bit of sugar. .....

When I got home late afternoon I was starving. I had 2 pickles, a slice of cheese and lots of water.

SUPPER was PIZZA! I used the flaxseed recipe to make myself a pizza crust and topped it off with a bit of ketchup with mushrooms, spicy sausage and cheese. Was just what the doctor ordered.

Didnt get to exercise allot today but walked a fair way, I finished my one and a half liter of water. Way to go!

ALL ABOUT TODAY: 29 MAY


Was another 300g down on the scale this morning 800g for this week! Wish it could always be like this :D Real life kicks in! My mind is right again and I have hope to fall into the 73's soon again. My lowest point a few months ago was 72.8. Amazing that I allowed myself to stray from there to where I'm now...... The great thing is that low carb does work when a person stick to the basics!

BREAKFAST this morning was 2 eggs fried in butter with a sprinkle of cheese, coffee and cream.

Midd morning I had a T of blue cheese to curb some cravings. I also had my usual midd morning 2T of coconut oil blended into a mug of coffee.

LUNCH was 3 cups of lettuce shredded and about half a cup of left over salad of tomato, cucumber and pickles with a good drizzle of olive oil, black pepper and some peppadew spicing. I had 2T of last nights chicken on top to create A CHICKEN SALAD.

My midd afternoon snack was half a cup of cubed cucumber drizzled with a bit of ranch dressing.

SUPPER was only at nine tonight. I ate some 80% dark chocolate out as a treat. Probably not the best when you are hungry but it was so good. I had to go into the city to do something this afternoon. Living in the village now takes almost 4 hours to the stores and back.  I was planning to eat something totally different but when I got home my sweet daughter had prepared something very special. She fried some spicy sausage with sweet red peppers and mushrooms. I enjoyed it with a good squirt of mayonnaise.

Had a good deal of walking today and that HILLS! I for sure did not drink enough water. Feeling a bit of a headache tonight. Tomorrow I will fill up my liter jar again and make sure I get through it.

ALL ABOUT TODAY: 28 May


I was more hungry than normal today BUY I'm celebrating a 500g loss this week! I'm smiling!

BREAKFAST was 2 eggs fried in butter with a sprinkle of cheese. Coffee and cream. Midd morning I had 2T of coconut oil whipped into my coffee. I had half an apricot through the morning and about a T of blue cheese.

LUNCH was a big lettuce salad with olive oil, black pepper and one hot dog chopped up with a bit of grated cheese.

We had friends over through the afternoon and I stood strong and ate no cake or any pizza bread. I had a coffee with cream.

SUPPER  was ground chicken cooked in a sauce of soya sauce, garlic, yogurt and a bit of sweet soya sauce. I had some oven baked zucchini, eggplant and mushrooms. I scooped the chicken sauce over the vegetables. Was devine!

I had about a liter and a half of water and walked briskly for 15 minutes. Hoping tomorrow morning to get up early and walk the dog.

ALL ABOUT TODAY: 27 MAY


The heat is on 31dC today! The hottest day for this summer. I think it is the end of Spring! The warmer weather helps me to drink more water for sure going to easy get my 1 1/2 liter of water in for the day. Could even push it to 2 liters!

Got a great deal of walking today to. Walked the kids back and forth to the sport fields this morning and walked my son down a lovely hill to catch a lift to school and I had to walk it back again.  No problem getting a great deal of exercise living in the village.

BREAKFAST was a lovely mug of coffee with cream, two eggs with a sprinkling of cheese.

I try to limit myself only to two mugs of coffee in the morning. My second mug was midd morning with 2T of coconut  oil whipped in. I thought that getting some energy from the coconut oil would help me clean the house today ;) It did!

My daughter made us all a snack midd morning of cheese, hot dogs and gherkin slices on toothpicks. What a great snack for Mama BEAR THE LOW CARB LADY!

LUNCH then was only a big bowl of lettuce with olive oil and black pepper (had my protein midd morning on toothpicks).

SUPPER is going to be TACOS! I will have the taco spiced ground meat on a bed of lettuce with cucumber, tomato slices, lots of ranch dressing and a good sprinkle of cheese...... and watch my family devour their trimmings on soft four tortillas. To be honest I actually enjoy the salad more.

The scale was a real NIGHT MARE this morning. Weighed a whopping 75.9 kilograms! Going to scare it tomorrow morning have hope that I can make it go down in one day..... at least a few hundred grams.

ALL ABOUT THE LAST MONTH!


This photo so much reminds of my journey the last month....... suitcase or bag in the hand LIVING THE LOW CARB LIFESTYLE! Or should I add trying to live it ;)

After a month of no internet in our new home IT'S HERE AT LAST! I have been missing the Low Carb updates and chats about low carb living and eating. I just realize how much I need accountability and others to cheer me on in this journey.

I fell of the wagon real hard a few times. I picked up it seems almost two kilograms..... it's to cry for. It is also a good eye opener so I know loosing the weight is real hard and picking it up again SO EASY!

The last month has been on its head in many ways. There were always food around but we live in a carb world and living a low carb lifestyle is not that easy in the real world especially moving and total chaos in many ways. It is doable but I had to bend many bows to stick to it or gave in and ate a few carb meals.

My sugar cravings had me by the throat and so subtle lured me in bite by bite... a little bit of ice cream, a bite of cream cake, a t of chocolate chips, a few chips a bowl of popcorn......... and it goes from a little bit and then I'm off track.

I tend to shy away getting my family all involved in my Low Carb eating. My husband is very supportive in my journey eating low carb. He always encourages me to keep going and compliments me on how great I look.

BUT very kindly and with such a great spirit he did mention this week that he is seeing me falling back into old habits...... eating carbs etc. It was painful in a way to hear.... I felt like I was being caught and felt disappointed in myself.... He said what he said with such love and he knows the pain of me struggling to loose weight for years and how it would be if I pick it up all again....

TODAY WAS A NEW BEGINNING!


The hardest part is making a COME BACK after a carb creep and falling of the wagon some. It is never too late and no mountain is to high to climb..... IT IS TAKING IT ONE STEP AT A TIME!


ALL ABOUT TODAY:

BREAKFAST was coffee with cream, 2 eggs fried in butter with a sprinkle of cheese.

MIDD MORNING I had another coffee and cream.

LUNCH was 3 cups of chopped lettuce with olive oil, black pepper and a few cubes of cheese, 3 strawberries and one very sour apricot.

SUPPER was out with friends for a birthday celebration. I had one ground meat kebab with lettuce, tomato, cucumber and herbs salad and about 2T of bulgur on the side.

I am trying to get back into drinking my liter and a half of water again. Drinking water is not part of the joy part of my life. It is pure discipline but needed.

It was hard today I was craving chocolate and had to stand strong and say no. Hoping tomorrow will be good news on the scale.

ALL ABOUT TODAY: 8 May



Sure getting better and easier EATING AND LIVING LOW CARB again...... especially as life is getting more normal in our new home.

BREAKFAST was skipped this morning and that with coffee too as we had to get full medical check  ups with EKG ETC for our local medical insurance. No breakfast was not the issue BUT NO COFFEE was big! I was so grumpy by the time the mammogram came around and it was a man taking it I just had to ask if there was not a women for this.... :D

LUNCH then was devoured by around 12h00. I had a shaved meat served on a bed of lettuce, tomato, cucumber, rocket and lots of green chopped herbs. Oh and then a big coffee topped with cream.

Had a bite of my husbands cheesecake.... wasn't the best thing to do but it was a little treat.

Had another coffee with cream late afternoon.

SUPPER was spicy meat fingers fried with red pepper served in lettuce boats with mayonnaise.

Didn't do well today drinking my one and a half liter of water.... but I got a great deal of walking in.

Our family will be going on a weekend retreat and will be back Sunday afternoon. I will skip writing tomorrow night and Saturday night but will come and tell Sunday evening.

It is going to be a weekend with open buffet meals....... The best thing for me will be to stick to the basics eggs for breakfast, salad for lunch and vegetables and meat for supper. Normally the desserts at these events are terrible and I know it will not be tempting.

ALL ABOUT THE NO INTERNET DAYS! 7 May



So frustrating without internet...... one moment there is and the next moment not!

REALLY hoping that internet will be installed in our home soon.

BREAKFAST this morning was the usual 2 eggs and a bit of grated cheese. 2 Mugs of coffee and cream though the morning.

LUNCH was left over tuna salad from yesterday.

AND AND THEN! I took my son to our old neighborhood to attend a class picnic this afternoon. Looking at the one and a half hour it took me to get there with public transport it really feels like we have moved passed the villages into the boenies......

I fell for couscous Turkish, tomato, onion and lemon balls at the picnic. Normally they serve these with big lettuce leafs to wrap the balls in but today there were none. I know it does not sounds to appetizing  but was so good. At least I passed the cake etc. ;)

I skipped supper tonight but had 2T of ground chicken and lots of water.

I have really been struggling to get back into a routine eating LOW CARB. The move and just totally out of my routine has not been helping. I have found that my sugar and chocolate cravings this T.O.M. have gone through the roof too. I have been eating more chocolate lately and I know it is not going to serve me well on the scale.......

Asking my family again to please not buy me chocolate as a treat or sign of love and gratitude..... I just can not stick to one piece. Rather not having it in the house or not knowing where they hide their chocolate stash is best for me :D

Making a commitment to pass the chocolate and go for GOLD!

The weather has turned warmer and I have been doing well drinking my one and a half liter of water.
As everything where we live is far apart I have been walking more. Just traveling with local transport works quite a bit of exercise into my every day.

ALL ABOUT TODAY: 5 May


I can not tell you how wonderful it is to BE BACK! The last two weeks were just crazy packing and moving to our new house in the village...... PAST THE VILLAGE actually ;) I have been working so hard unpacking and making a home for my family. There is blinds and pictures that still needs to be put up but we are almost there.

I tried to stick to low carb as much as I can during the last two weeks..... BUT OH...... It was difficult. Just when I think YES I HAVE ARRIVED I fall so hard...... More than ever I know that I do have a problem with eating sugar when I'm stressed. I did not have as much problems with bread.... but one evening a friend brought over oven baked spagetti bolognaise and oh I just ate it AND LOVED EVERY BITE! I was just so tiered and did not make even try to tweak the meal to fit into LOW CARB.

I got on the scale this morning and weighed a whopping 74.8 kilograms! A GOOD DAY TO START AGAIN aiming for my goal of 70kg!

I know that if I want to reach my goal I need to be accountable. I want to thank you for being here and being part of my journey. As you can see I have not arrived yet ;) I am not perfect and I do not have answers to all the questions..... but I know low carb works.

I look back over the 17kg I have lost and am looking forward to the last bit to reach my goal. The last two weeks was a good eye opener for me..... I do have hope that I can loose more weight but I think keeping the weight that I have lost LOST is going to be a challenge....... I have worked so hard to get where I am..... Know that you are not alone in your struggle. TOGETHER WE CAN DO IT!

LUNCH was a tin of tuna with mayonnaise, black pepper and a side salad of lettuce, tomato, gherkins and cucumber.

Midd afternoon I had another coffee with cream.

SUPPER is going to be a chicken fillet strips baked in the oven with eggplant circles. I am thinking of wrapping the chicken in lettuce leaves with eggplant and mayonnaise.

I have tried to drink my liter and a half of water today but only got to finishing a liter. Maybe I can do another half a liter in the evening. I walked the kids to the sport grounds and back about  a ten minute walk down a VERY STEEP HILL and back.
