I have been on a diet journey since my midd twenties, but as I entered my forties the scale climbed me steady up to 89 kilogram and I knew I had to loose weight! After I discovered recently that I was becoming insulin resistant I had a new urgency in my life to loose weight. Not just to loose it but find a lifestyle of loosing it. I decided to go by the way of LOW CARB EATING. This blog is about my journey..... the good and the bad.....

ALL ABOUT TODAY: 21 November
Yesterday morning when I got on the scale I was at my lowest point of 70.3 and I had high hopes that this morning I could drop past 70kg! Well life in the fast lane ;D I was shockingly almost a kilogram heavier this morning than yesterday.......... I realize our bodies are much more complicated than we think. I'm not quitting I'm going for the goal!!!!!!
I did then do 10 minutes last night on the elliptic walker.... I was aiming for 11 minutes but just did not have the energy. Soooooooo tonight I'm going for 12 minutes!!!!!
BREAKFAST this morning was a bit different I had Greek salad! I had cucumber and tomato salad with feta cheese. Coffee and cream.
Midd morning I had a t of home made peanut butter and 2T of coconut oil. I keep my coconut oil in the fridge and then with a knife break pieces off. The first time I ate it like this I thought I was not going to survive. Honestly this morning I did not blink an eye. It is getting easier.
LUNCH was Chinese cauliflower rice stir fried. I had two eggs and a green pepper stir fried with the cauliflower rice.
Midd afternoon a great coffee with cream.
SUPPER is going to be sardines baked in the oven with left over chinese stir fried cauliflower rice, tomato and onion salad. 2T of pumpkin sprinkled with cinnamon and olive oil baked in the oven.
I went to the local fruit and vegetable pazar this afternoon and bought the sardines like a real local. I am craving bacon.......... and I thought this could fill its place as a treat. Was quite a workout to clean them but hey I hope the taste will make up for the workout.
