ALL ABOUT TODAY: 31 January


This great looking group was lunch today!

The scale has been climbing I picked up! Not sure why yet but I think there is a big carb creep with cheese... ;) and that T.O.M coming up. Weighing on Monday again!

BREAKFAST this morning was a big treat with great friends. We invited over our Korean friend to celebrate Chinese New Year. I made scones with cream and jam for her and the kids. I was thinking to make the bun in a mug for me but instead I had 3 boiled eggs with tomato, cucumber and a bit of cheese. Coffee and cream.

LUNCH was a treat from my Korean friend. We made the kimbab sushi rolls. Most rolls was with rice and I chose to skip those. Instead, I made some cauliflower rice and made some rolls for me and dipped it in soy sauce. It tasted great even my Korean friend thought it was a hit. We had a very late lunch so there was not much time for nibbling in-between but while cooking the chicken to go into the rolls I nibbled ;)

SUPPER was another treat as a neighbor invited our family over for pizza. I had a lovely green lettuce salad with tomato and cucumber pieces and lamb strips. Olive oil and lemon. I must say herbal tea is growing on me. Coffee is more my thing but as the weather has turned cold again I can't drink so much coffee so the herbal teas is a good filler.

ALL ABOUT TODAY: 30 January


Nothing more special on the scale just standing....... But I have excellent news. My husband is in SA for a few weeks and bought me the book: Real Meal Revolution from Tim Noakes as a gift. I'm smiling all the way. Can't wait to lay my hands on it.

BREAKFAST was two egg omelette with a bit of white cheese and tomato slices. Coffee and cream.

I think I had way too much coffee today ;)

Before I ran over to my neighbor for an event I had a hand palm filled with almonds. I thought what ever I get to eat the nuts could curb my hunger, and it turned out to be a great help.

LUNCH was a visit to my neighbor... she had a bunch of ladies over for a visit. I took a cake a very good cultural thing here to do. It turned out the only something there to eat was kisir (a bulgur salad) wrapped in lettuce leafs. I tried to take as least as I can not to offend anyone. Had a good glass of Turkish tea.

SUPPER was a welcomed event. I was starving by then....... I made chicken soup for my family and broccoli cheese soup for myself. I had a bowl of the chicken soup before I added the noodles. I also had a good serving of the broccoli cheese soup. Was good and filling. Just what the LOW CARB DOCTOR ORDERED ;)

My teenage daughter says it is the best soup she has ever eaten. Wow!

Here is the BROCCOLI CHEESE SOUP recipe:

1. Fry onion in butter add raw broccoli florets to this and cook a bit.

2. Add water to the pot to make the soup.

3. Add black pepper, chicken stock cubes and a few crushed cloves of garlic.

4 Boil until broccoli is soft. Mash with a masher and stir in 2T of cream and one cup of cheese.

5. I added 2T of lemon to give it a good kick.

6. Be warned one bowl is not enough! ;)

Some days just turn out so crazy and then trying to live a Low Carb Lifestyle...... I barely get to sit down to think ;)

ALL ABOUT TODAY: 29 January


Was up on the scale this morning :( We went to visit friends in a village and they served us white cheese that was absolutely divine. I found it in a store and have been eating too much of it...... in the past cheese have given me a stall or gain. Also I have been digging into the lovely, red,  sweet tomatoes this time of year.... cutting back on cheese and tomatoes.

BREAKFAST was two eggs with coffee and cream.

Midd morning I had more coffee and cream and a hand full of almonds.

LUNCH was left over layered salad from last night with egg and tuna quiche.

Midd afternoon I had a T of chocolate chips. Was craving some chocolate. The weather has been turning cold again and I'm looking for comfort food. I should make a nice pot of soup like broccoli with cheese, chicken etc.

SUPPER was three Turkish ground meat kebabs with the last of the layered salad.

My husband is in SA for the next three weeks so me and the kids go back to basics and just eat what we like ;) I just need to stay clearly on Low Carb though.

ALL ABOUT TODAY: 28 January


Standing at a station on the scale. ;) But I'm very happy for the lost of the last week.

BREAKFAST: We had a Turkish breakfast out as a family it was omelette, spicy sausage, black olives, cucumber and white cheese. A great treat.

LUNCH was seaweed sheets filled with turkey ham, cheese and tomato pieces with mayonnaise.

Had another 2 mugs of coffee with cream.

SUPPER was this delicious salad with chicken pieces.

RECIPE:  Layered Salad

Layers:  chopped cabbage, dressed with a mixture of mayonnaise and a touch of vinegar, next layer is grated cheese, one green pepper and one red pepper cubed, finely chopped cauliflower, red onion chopped, bacon (I used a spicy sausage as bacon do not exist where I live). Topped off with pieces of chicken. I added a sprinkle of green onion for a bit of extra color.

This was one delicious salad. Enough to feed a crowd.

ALL ABOUT TODAY: 27 January



Was shocked this morning when I got on the NEW SCALE...... he was so gracious this morning and weighed me:  73.1!!!!!!!!!!!!!

BREAKFAST this morning was 2 pieces of the egg and turkey ham quiche left over from yesterday mornings breakfast. Coffee and cream.

Had some more coffee with cream through the morning.

LUNCH was a really sweet gift from my dear neighbor and friend down the street. She knows I'm doing low carb and she is a great blessing. Lunch then was the cauliflower  mock potato salad, stir fried onions, mushrooms and brussell sprouts, and a great lettuce, tomato, herb and cucumber salad. I got home home late for lunch and didn't know what to eat this was a real gift from God.

Midd afternoon my family had pizza and I had the toppings of two pieces ;)
Also 100g of Greek yogurt with carbs of 3.7 (thought that was not too bad) and one t of dark chocolate chips stirred in.

SUPPER was going to be at a event but I then did not go. It turned out to be a supper at home. I had a lettuce salad with some pizza toppings and tea.

ALL ABOUT TODAY: 26 January


There is always hope!

I was down to 73.9 this morning. The new scale seems like it is a good help after all ;D

Sundays stay a very interesting food day.

BREAKFAST: I made a quiche with turkey cold meats, cheese, cream, milk and eggs. I had 2 pieces of this with slices of tomato. Coffee and cream.

Late morning just before we left for church I had another cup of coffee with cream and a hand full of almonds.

Midd late afternoon I had LUNCH-SUPPER: I had a few pieces of roasted chicken and it worked out that I had just a few pieces of tomato and feta cheese with that.  Felt like chocolate and had a teaspoon of dark chocolate chips.

I was hoping to make a lovely salad and some vegetables with my supper but it didn't work out like that. Living a low carb lifestyle with a family with small kids is not always easy. Tomorrow is Monday and then I go on again.

ALL ABOUT TODAY: 25 January


We were visiting today with dear friends. I find it very challenging visiting with other people at their homes and me eating low carb..... I have to make the best of what there is to eat, which is not always an easy task. This time I was asked to bring cinnamon rolls no way I could eat that.

BREAKFAST was 2 eggs with cucumber circles and tomato slices. I had 2 cups of coffee and cream. Long story as I got up so early.....

Midd morning I had a hand full of hazelnuts for a snack.

The rest of the day I had TOOOOOOO much coffee for sure. Visiting with dear friends always adds the coffee up. ;)

LUNCH was lentil soup and tomato soup. I had a bowl of both and a nice big green salad with feta cheese on the side. Hey and I skipped the cinnamon rolls and birthday cake! :D

SUPPER was a real challenge for me. My family just wanted sandwiches as we got home late..... I had then to cook up something for myself....... I made the better choice! I stir fried some brussell sprouts in garlic, lots of black pepper,  butter and stir fried some tuna in.

Feeling good!

ALL ABOUT TODAY: 24 January


The big weigh in happened this morning on the NEW SCALE! It was very disappointing I weighed 74.5...... 4.5 kilogram heavier...... OH Well!!!!! Now I go from there ;)

BREAKFAST this morning was two eggs with feta cheese and a cup of cucumber circles. Coffee and cream.

I had more coffee midd morning with a T of  coconut oil and a hand full of almonds to keep me full and going.

I was getting ready for a birthday party at our home and it was crazy!

LUNCH was on the run. I had two of the flaxseed bread slices with pizza sauce with cheese and a bit of meat melted in the microwave to make mini pizzas.

Midd afternoon just before the party I cooked a chicken fillet and enjoyed it with mayo, a sprinkle of mozzarella cheese and a bit of bacon bits. To keep me out of cake and trouble with the other treats ;)

SUPPER was a salad of tomato and cucumber slices topped with tuna.
AND I have to say I stayed clean LOW CARB and out of trouble with all the yummy treats at the party. It helped that I was running around like of head of chicken, didn't have a change even to get into sugar ;)

ALL ABOUT TODAY: 23 January


My dear husband is a real sweet heart. He surprised me today with a brand new digital scale being dropped of as a gift and surprise for me ;) I am so grateful as my old scale I have had for the last 17 years and he does not weigh the same every time even if there is a minute between the weighs. Drives me nuts to be honest. BAck to the new scale!!!!!!!! I got on this afternoon off course and weighed 5kg heavier than my old scale. Hmmmmm will weigh tomorrow morning as I normally weigh and see how much difference there is.

HEARTBREAKING to be honest....... I feel that I have worked so hard to weigh 70kg and now suddenly I weigh 75kg........ Thank you for listening.... probably will feel better soon ;)

BREAKFAST this morning was 2 eggs fried with feta cheese, coffee and cream.

Midd morning had more coffee and cream.

LUNCH was 3 Turkish meat kebabs and had cucumber slices dressed with cream cheese.

More coffee and cream this afternoon. Was quite the day and the coffee kept me going ;)

SUPPER was a good helping of broccoli fried in butter with black pepper and a chicken thigh browned and tomato slices.

ALL ABOUT TODAY: 22 January



BREAKFAST this morning was 2 eggs fried into an omelette with eggplant circles left over from supper last night. Was quite good. Had coffee and cream.

Midd morning some more coffee and cream.

LUNCH was turkey ham slices rolled around cheese and tomato. Then I had some cucumber, tomato and gherkin salad also left over from supper last night. At the end I had one slice of the flaxseed bread with butter and cheese.

Midd afternoon a small espresso cup of coffee and cream.
Had a few circles of cucumber with a touch of feta cheese and tiny drops of sweet chili sauce.

SUPPER tonight will be taco salad. Lettuce chopped topped with a bit of tomato, ground meat spiced with Mexican spicing, a bit of grated cheese and mayonnaise. This is one of my favorite meals.

I find that I'm less hungry the last few days. It is a good sign. Normally when I crave and am very hungry just through the day then I know there is some sugar or carbs creeping in some where. Holding on and out hoping to break through my plateau soon.

ALL ABOUT TODAY: 21 January


Nothing more down on the scale just hanging onto 70kg! Just 5 more to go! It feels like forever to get past this point. I'm not giving in I'm going for 65kg!!!!!

BREAKFAST was 2 fried eggs with a sprinkle of cheese and two slices of the flaxseed bread with a good spreading of butter, coffee and cream.

Had more coffee late morning with a T of coconut oil. Kept me nice and full till lunch.

LUNCH was a tin of tuna mixed with mayonnaise and a good grinding of black pepper wrapped in big lettuce leafs.

Had more coffee this afternoon with another T of coconut oil.

SUPPER was roasted chicken, with a salad of tomato and ghurkins and eggplant circles fried in olive oil on the side.

Going to an event tonight so I had to eat earlier. I'm taking a chicken pasta dish so I do not think there is going to be much for me to eat. Normally at pot lucks it is heaped with carb laden foods. Hoping someone will bring a salad. If not then I just stick to a glass of water, a smile and a cup of tea ;)

ALL ABOUT TODAY: 20 January


FLAX SEED BREAD:  


The highlight today is the flaxseed bread I baked:

2 cups ground flaxseed meal
1T baking powder
5 eggs beaten
1/2 cup water
1/3 cup olive oil
1t salt

-Mix well and pour into a loaf pan. Bake at 180dC for 20 to 30 minutes.

I made this today and wow it was a sure joy to have bread. Bread that is actually in slices :)

BREAKFAST was 2 eggs fried served with cucumber and tomato salad that was left over from yesterday. Coffee and cream.

LUNCH was 3 slices of the flaxseed bread with cheese and tomato.

Midd afternoon I had a special coffee and cream with a sweet friend.

Late afternoon I sliced some cucumber circles dressed it with a dollop cream cheese and a tiny drop of sweet chili sauce on each slice. Was the best snack in years.

SUPPER is going to be baby meatballs and spicy sausage circles stir fried with onion, garlic, broccoli, cauliflower, mushrooms and cabbage topped with a drizzle of soy sauce. My family will enjoy their stir fry with pasta bow ties and mamma bear will enjoy hers in a bowl.

HOW AM I DOING:

I thought of including this part in the blog just to share my emotional struggles with Low Carb Eating. My desire is to make Low Carb Eating a lifestyle. It just feels without accountability it seems an impossible thing. At times I feel so discouraged trying so hard to fight this battle to loose weight. I'm a stay at home mom home schooling my three children....... and food is a big part of my day as I cook all three meals and my day is often in the kitchen for hours. I take hope in the fact that Low Carb eating does work. That there is a way to loose weight and keep it there.




It helps me to look back over my before and where I am now photos to see where I have come from. I definitely do not want to go back to my old ways!

ALL ABOUT TODAY: 19 January


A very sweet friend and someone that sets the tone in low carbing noted this morning that she thinks I eat very little........ I looked over the last few days and yes, I have not been eating enough. Often over weekends it goes crazy between events and trying to feed my family breakfast, lunch and supper. I neglect myself......

The hard thing about Low Carb living is if you eat too much protein you will pick up weight. Too much carbs and you will pick up. Eating too little and you will stall. It stays a fine art between proteins and carbs. Then to add to the confusion we all handle protein and carbs different. Each person need to find a place that suits their body.

Yet again I want to encourage us all to be accountable and open and honest about your struggles and victories low carbing. Just this afternoon I was quickly shopping for a few food articles in a store for the week. I was coming home from church and was starving as I had breakfast at about ten this morning and the cake etc. at church I just had to give a skip. In the store they had dark chocolate covered peanuts. Everything in me wanted to buy a few and just EAT IT ALL UP! No one will know? It is just a bit? Just 8 carbs for 25g?????? I WAS TEMPTED FAR ABOVE MY STRENGTH..... it was 3 in the afternoon JUST EAT IT YOU DESERVE IT!!!!!!!!!!!!!

Was so happy my mind kicked in. I had to put the bag down and tell myself NO! Otherwise I had to come and tell :D It would have put me back probably a few days loosing on the scale..... As hard as it was I just knew being accountable was a big help in this situation to say no.

Find someone you can share with. Join my facebook page and come tell, I promise I will not shuff you off I know how it feels to struggle getting it together. People were patient with me and supported me when I knew nothing about Low Carb eating.

BREAKFAST was spicy sausage cubed, grated cheese, bit of cream with egg quiche. Had tomato and cucumber on the side. Was such a good filling breakfast. Coffee and cream.

LUNCH - SUPPER: I got home at four and a good portion of stir fried cabbage with garlic, black pepper and olive oil. Had pieces of roasted chicken on top.

Made myself an espresso coffee with cream for dessert. I will probably not eat anything more this evening just a nice hot cup of cinnamon apple tea.

SOME GREAT IDEAS FOR THIS WEEK:

-I have not been drinking enough water. Want to make sure I drink more.

-I would want to make sure I eat enough but not more than my 20g of carbs a day and a good portion of protein at every meal.

-I want to try out some new recipes to get me going being excited Low Carbing.

-Not going to make the coconut oil chocolates soon again. I think the artificial sugar has stalled me....... STAYING AWAY! There is a few still left in the freezer will leave them for next weekend if I have reached my goal of falling under 70kg!

ALL ABOUT TODAY: 18 January


Was up a kilogram this morning....... could not believe it. Out of the blue! Had a good day food wise today hoping to see the scale drop. Saturdays and Sundays are always challenging as it is not in schedule as our family either go some where or we eat when we feel like it.

BREAKFAST was 2 eggs fried with a sprinkle of cheese. Coffee and cream.

LUNCH was a piece of chicken with mayonnaise. It was on the run as I was getting ready to go to a baby tea of a friend. I knew there would be no protein hanging around so I had to eat something before I go.

I had 4 of the coconut chocolates to calm my sweet tooth on my way out the door :)

I had some eggplant dip at the baby tea and just ate it with a little spoon. Was so good.
THEN I had 2T of the chocolate cream cake it was more cream than cake. Hoping that the cream would not do too much damage.

SUPPER was a big lettuce salad with lemon and olive oil.
Tomorrow is another day!

ALL ABOUT TODAY: 17 January

I was down to 70.1 this morning....... going to break 70kg this weekend! :D

BREAKFAST was a two egg omelette with a T of tuna and grated cheese. Coffee and cream.

Midd morning I had 3 cubes of the coconut chocolate with cucumber circles spread with cream cheese.

LUNCH was a bowl of the Chinese egg drop soup. It was the last bowl of the batch. I really enjoyed the soup and will make it again.

Midd afternoon I had another coconut chocolate. These things are addicted going to limit myself to only two a day ;)

I made 2 Turkish meat kebabs and enjoyed as a snack was starving late afternoon.

SUPPER was 1 more of the meat kebabs, 1 cup cauliflower salad, 2T of carrot pineapple salad.

ALL ABOUT TODAY: 16 Janaury


Nothing down more but I'm getting there!

BREAKFAST was 2 eggs fried in butter, had some left over cucumber and tomato salad from last night with this.  Coffee and cream!

Midd morning I made some "CHOCOLATE"



I made some COCONUT OIL CHOCOLATE WITH PEANUT BUTTER FILLINGS for me for a treat. ;) I used 4T coconut oil, 2 heaped T cocoa powder, 1t vanilla essence, 2T stevia sweetener powder and unsweetened home made peanut butter. -Melt the coconut oil in microwave on low. -Stir in the cocoa, vanilla and stevia or sweetener of your choice. Scoop into ice tray compartments and drop little spoons of peanut butter inside. Put in freezer to set. ENJOY!

It turned out absolutely yummy! I had two of these and it gave me a good energy kick as it was house cleaning day today.

LUNCH was tuna salad with cheese cubes, tomato, cucumber, ghurkins with mayonnaise wrapped in lettuce leafs.

Off course for dessert I had another one of these chocolates!
I have made something like this before but it tasted so bad I forced myself to get it in as I did not want to waste the coconut oil. These are so tasty I have to tell myself not to want to eat all at one sitting.

SUPPER will be a chicken fillet with mustard and ranch dressing, steamed broccoli, 2T of baked pumpkin and 1 cup of the cauliflower salad.

Wasn't such an exciting day food wise...... But it was a good Low Carb day.

BREAKFAST was two eggs fried topped with a sprinkle of cheese. Coffee and cream.

Had more coffee midd morning.

LUNCH was a bowl of the chinese chicken soup, bun in a mug topped with cheese, mayonnaise and turkey ham with some chopped tomato and cucumber.

Midd afternoon I had another few pieces of turkey ham with a bit of cheese and a cup of sliced cucumber and a T of peanut butter with a T of steamed cinnamon apple.

SUPPER will be another bowl of Chicken soup.

ALL ABOUT TODAY: 14 January


I'm in a stall for a few days. It does not worry me as I had the flu and dropped quite a bit of weight in a short time. I just need to wait it out patiently and get going.

BREAKFAST was 2 eggs fried with a bit of grated cheese. Coffee and cream.

I tried not to snack in the morning as I knew about a special lunch coming up:

LUNCH was a big treat by my husband as it is our 19th wedding Anniversary today. He took met out for lunch. I had a Chinese beef and vegetable stir fry and asked that they would replace the side dish of rice with salad. I thought YES A LOW CARB LIFESTYLE IN MOTION! My husband ordered my favorite sweet and sour but I knew the sugar was just too much and skipped it.

THEN............... I had chocolate! Too much for a low carb diet ;( How typical!

I skipped supper as of the big meal out and the chocolate........ Drinking allot of water and going to sip on herbal apple cinnamon tea for the evening. Oh well tomorrow is a new day and then I go on again. Just knowing that the few day stall is for sure going to be influenced by the chocolate.........

ALL ABOUT TODAY: 13 January


First day of a new week and often the beginning of many beginnings for dieters ;)

BREAKFAST was the last piece of the broccoli quiche, half an avocado stuffed with tomato and cucumber pieces. Coffee and cream.

LUNCH was the CHINESE EGG DROP CHICKEN SOUP


A sweet neighbor and friend send me baked eggplant boats filled with vegetables, feta cheese and ground meat over for a treat too. It was so good! I ate the two boats and the soup.

Midd afternoon I was hungry again I had 1T of peanut butter and 1T of coconut oil and that did it.

I think with the flu I ate too little.... and it kicked my body into craving sugar again and a weight loss stall. Today I'm trying to take in more carbs and fats to get back to loosing weight again. What a strange business weight loss is: Eating too much causes weight gain and often eating too little prevents weight loss...... STRANGE! is all I can say.

Had more coffee and cream midd afternoon.

SUPPER will be left over barbeque chicken from yesterday and I wrapped chicken strips in lettuce leafs with ranch dressing. OH and off course :D I had another bowl of the soup! just to hang me over until supper. I baked some eggplant circles in the oven with olive oil and a sprinkle of salt. Will have a few of this too. As I sad I have sugar cravings again so I had a T of chocolate chips and that it it!!!!!!!!!!!!!!!!

ALL ABOUT TODAY: 12 Janyuary


BREAKFAST was a nice size piece of the broccoli egg quiche. Coffee and cream and half an avocado with salt and pepper.

Midd morning I had some more coffee with cream and 4 pieces of cold meat wrapped around a bit of cream cheese.

LUNCH/SUPPER we ate at about four: I WAS STARVING! I had the cauliflower mock potato salad, chicken, turkish ground meat kebab with a piece of spicy sausage.



I'm still trying to get rid of the flu, as soon as I feel its gone then it starts back up again.... :(  .. My appetite comes and go......which is not a bad thing for a girl that loves to eat ;) Hoping that this week I will drop as well as I did last week.

ALL ABOUT TODAY: 11 January


In the midst of the flu I'm dropping the kilograms ;) Wish it was as easy as that?..... Down to 70.3 kg this morning though. Looking forward to reach 69.8kg this week..... was my lowest point before I stalled and then climbed the Christmas pick up!

BREAKFAST was a two egg omelette with strips of turkey ham and cheese. Coffee and cream.

Midd morning I had half an avocado pear.

More coffee and cream later in the morning.

LUNCH was tuna left over salad that had cucumber and tomato slices with a bit of cheese cubes.

Midd afternoon my daughter made gherkins, cheese cubes and hot dogs circles on tooth picks for a snack. I had 4 of these.

SUPPER was chicken pieces with spicy sausage, cucumber cubes wrapped in lettuce leafs with ranch dressing.

I have not lost this well for quite some time. I'm wondering about the Carb Cycling approach. Where people that normally do low carb go on days where they eat more carbs than usual and then some days no carbs.

ALL ABOUT TODAY: 10 January

I was down to 70.8kg this morning! I have the flu and was in bed all day. When I pass coffee then I know I'm really ill! Hoping that it will pass soon.

BREAKFAST was a slice of the broccoli quiche with half an avocado with a tiny cup of coffee and cream.

I have no appetite and feel like nothing to eat.

LUNCH was a cup of tuna salad with cheese cubes, tomato and cucumber pieces.

Midd afternoon my daughter bless her heart surprised me..... with melted dark chocolate chips and almond treats. I had about a T of chocolate and 5 almonds.

THEN the other one came and dropped of a bowl of popcorn while we were watching the amazing race in bed....... I had a cup of popcorn :D

SUPPER will be a chicken filet fried in butter with zucchini strips. Did I mention my family is having pizza! ;)

Was not the best LOW CARB DAY but I'm really hoping to feel better tomorrow and get going again.

ALL ABOUT TODAY: 9 January


I'm in bed with the flu. Have been traveling through our family and now it's my turn ;)

I was down another 300g on the scale this morning. Now I'm down to 71.0 wish it was rather 70.9....

BREAKFAST was in bed this morning as a treat from my eleven year old daughter. When she said I should stay in bed and breakfast was on her I was a bit worried at first wondering what she will come up with. I was in for a good surprise. It turned out to be scramble eggs, half a cup of tuna, half an avocado stuffed with tomato and cucumber salad. Coffee and toooooo much cream ;)

LUNCH was 5 pieces of cold meat with a strip of cheese wrapped with a bit of mayonnaise.

Had a T of peanut butter midd afternoon and t of dark chocolate chips. Coffee and cream.

SUPPER is very tempting! Rather my family's supper is tempting! I am making the famous coke chicken for my family as we have no diet pepsi in the house. It smells like heaven... and I can't eat it! I am going to skip their chicken dish as the sugar would throw me off. Rather I cooked a chicken thigh in the microwave for me and dressed it with ranch dressing. I try to eat my protein earlier if possible as it normally helps me not to be so hungry when supper comes around (and then I might just eat to much of the wrong things).  I am going to have a cup of zucchini strips fried in butter and garlic when supper comes around later with my family.  I don't feel much like eating tonight......... I know I might have the flu when my appetite is not ticking as usual! ;)

ALL ABOUT TODAY: 8 January



It can only be a great day when I'm down on the scale to 71.3!!!! I have lost 2.2kg this week!!!!! It feels great on the one side and then on the other I am wondering when it will come to a plato or halt.... again. I am looking forward to get to my lowest point of 69.8 again and then heading out to my goal of 65kg.  While it's going I'm going with! I'm so motivated a cheat is not even an option...... The price is to high to pay.

BREAKFAST this morning was half an avocado chopped into an omelette with tomato and mayonnaise. Coffee and cream.  It kept me full all morning.

LUNCH was a great quich idea I found on a low carb page recently. I used 10 medium to small size eggs, 1 cup of milk, 2 cups raw chopped broccoli, 1 cup salami, chorizo or spicy sausage chopped and one cup grated cheese. I just layered this in a oven proof dish and baked it in the oven. Even my picky eaters had seconds. Way to go LOW CARB MOM! ;) I made a side salad with tomato and cucumber and had about half a cup of this too.

Midd afternoon I had 1T of coconut oil and home made peanut butter and another coffee and cream to pick me up.

SUPPER was a tin of tuna mixed with a touch of mayonnaise, chopped gherkins and wrapped in lettuce leafs.

This is a short clip on Low Carb eating that meant so much to me. This man is highly respected in the sport community all over the world. I was touched by his humility and openness on low carb eating and how it changed his life.

My husband really likes this man and was stirred by this clip to see how he can change his  own lifestyle and move into more healthy eating habits himself. He does not need to loose weight but I'm thinking of our kids eating a high carb sugar diet and him struggling with reflux.

Todays lunch was a real low carb lunch and the kids and my husband loved it. We will take it slowly but trust that good changes will come out of this.

ALL ABOUT TODAY: 7 January


What a day! It's on its head!!!!!!!!!

BREAKFAST was half an avocado, salt and pepper. Coffee with cream.

Midd morning I had a T of coconut oil and a slice of cheese melted in the microwave.

LUNCH was a big salad of shredded lettuce with olive oil and lemon (my new favorite). Six mini meatballs and a bowl of chicken soup.

Midd afternoon I was at a meeting and a tiny sliver of a pear and one grape. Coffee and a touch of milk.

SUPPER was a chicken thigh dressed with mayonnaise, cucumber and tomato..... I'm eating something before leaving  to an event where I'm taking the birthday cake. Will not eat it but maybe there will be a bit of salad from the meal. Hoping!

ALL ABOUT TODAY: 6 January


I was down to 71.8kg this morning! Yay!!!!! I'm dancing the jig! I keep telling myself just keep going.... keep going! It seems like an agonizing slow process reaching my goal and Christmas with all its treats to eat did not help me to get there. Like they say, it is not about the falling but getting back up after you have fallen!

It is very encouraging on people commenting on how much weight I have lost. Today when I was walking back from school after dropping of my son a lady I do not know stopped me and told me how good I looked and she can see that I have lost allot of weight. Little encouragements like this keeps me going.

BREAKFAST this morning was 2 eggs with a avocado, tomato, cucumber and a bit of carrot salad. With coffee and cream.

LUNCH was omelette for my family with cheese, hot dogs chopped and tomato. As I all ready had eggs for breakfast I was thinking of having something else but I just had some omelette with them. I thought that eggs can only be a good protein source.

I had more coffee with cream and a T of coconut oil midd afternoon.

SUPPER will be Malaysian "bobotie" ground meat for my family. I was hoping I could have some too but then off course the bread inside so I skipped it...... I cooked a chicken fillet in the microwave and fried in slowly in butter and curry in a pot for me. Goodness me! With steamed broccoli and about 2T baked pumpkin with cinnamon. I'm not deprived of anything!!!!!! :D

ALL ABOUT TODAY: 5 January


BREAKFAST this morning was scones, cream and jam for my family and a friend visiting. I was very grand and made the "bun in a mug" for myself. I  sliced it in circles and then dressed it with marmite and cheese and then cream with a sprinkle of cinnamon. Enjoyed it with coffee and cream. I did not even drool on my family's scones ;)

We came home at four this afternoon after being out all day: the only eatery around were pretzels, cream cake, pastries and chocolate cake. I was able to stay strong and came home and had a T of freshly home made peanut butter to pick me up.

SUPPER was freshly baked fish from the fish market. I don't even know what the fish is called but it was delicious. I had a big bowl of shredded lettuce dressed with lemon and olive oil for salad. Had a few pieces of tomato and cucumber added.

ALL ABOUT TODAY: 4 January


I just love Saturdays with my family relaxing. We went for a long walk in the forest UNTIL someone fell into the creek :D

I was down on the scale this morning to 72.3! I started off on the first with 73.5 so just a bit more down than a kilogram. Hoping to hit my lowest point of 69 again soon!

BREAKFAST late morning was a 2 egg omelette fried in butter with grated cheese. Coffee and cream.

LUNCH was steamed cauliflower dipped in egg and fried served with ranch dressing. Had a chicken fillet with mayonnaise, with an egg omelette with the little pieces of cauliflower that was left over and too small to fry. Was a really nice lunch.

Had 4 small cubes of 80% dark chocolate coming to 4grams of carbs.

SUPPER will be a mixed salad of lettuce, tomato, cucumber lettuce and feta cheese.

So grateful my appetite is decreasing and I'm not wanting to swallow the trash can and all it's content too :D

ALL ABOUT TODAY: 3 January


GOING FOR GOLD!

The weather is quite cold where we live...... I do not feel like eating salad. I'd rather want protein and hot soup.

BREAKFAST was a treat from my daughter this morning. A two egg omelette with cheese. Coffee and a bit of coffee creamer - we are out of cream!!!!!!!!!!!

Had another 2 mugs of coffee with a bit of creamer.

Late morning I had a T of coconut oil and 1T of chicken left over from last night.

LUNCH was 1 cup of the cauliflower "mock potato salad" and two Turkish ground meat kebabs.

I was out this afternoon and had a good time not feeling hungry and wanting too eat all that is in sight.

SUPPER Friday evenings are traditionally pizza night. I made my family the usual pizza and then I had a bowl of chicken spinach soup to curb my hunger and I will make the bun in a mug with pizza sauce and cheese melted in the oven.

Hoping to have a good weekend weigh down!!!!!!!!!

SUPPER TONIGHT!


SUPPER TONIGHT!

CAULIFLOWER "MAC AND CHEESE"

Chop the cauliflower into florets and steamed till soft.
Put into oven dish, sprinkle with salt and black pepper
Pour 1/2 a cup cream into the dish
Sprinkle with grated cheese
I added a bit of bacon sprinkles for taste and color
Before serving sprinkle with chopped green onion



DIET PEPSI CHICKEN

-Slice the chicken filets (I used 4 medium size filets) in strips
-Fry in pot with butter until cooked
-Add a tin of diet pepsi, 1/3 cup soy sauce and 1/2 cup ketchup
-Add a good grinding of black pepper
-Cook on low heat covered for half an hour
-Serve on top or next to cauliflower casserole.

I was down this morning to 72.8! I am so glad to see a down on the scale after the "picking up of the Christmas Season" :D I suspect that it is more water weight than anything else but it is down!!!!!

BREAKFAST - was the bun in a mug this morning topped with a fried egg, butter and a sprinkle of cheese. Coffee and cream.

Had a T of coconut oil midd morning and a T of tuna fish.

LUNCH was a bowl of chicken spinach soup and on the side cucumber topped with cream cheese and a cup of the cauliflower mock potato salad.

Had another 2 cups of coffee with cream in my little espresso cups.

I was cleaning the house today and just needed that extra kick so I had a t of dark chocolate chips. I find if I eat only a t at a time it works better for me than having a slab of chocolate where I only break off a cube at a time.

SUPPER is going to be Hong Kong Chicken. I cooked the chicken strips in a tin of Diet Pepsi and soy sauce and half a cup ketchup and topped it on top of steamed cauliflower with a bit of cream baked in the oven with a bit of cheese on top and is going to have steamed broccoli drizzled with a bit of butter on the side and 2T of steamed pumpkin. Yum!

ALL ABOUT TODAY: 1 January


Weighed in this morning at a whopping: 73.5kg! :D It is a new year and I'm all geared up to get going and walk this Journey loosing weight the Low Carb Way! I have hope that this year I will reach my goal weight of 65kg!

Through this holiday Season I have realized that making this way of eating a lifestyle is still far off for me.... My hope is to also this year learn more about Low Carb eating and bringing it into a place that I can call this a Lifestyle.

I have again come to a place where I have realized my need for accountability in reaching my goal. I have decided to go ahead and commit to this blog to reach my gaol. Each one of you are important in this process and I'm hoping that you could be encourage to walk this Journey with me in victory.

During this time of just enjoying some holiday food ;) I have started to get into old habits of eating larger potions of meat etc. Now to get myself back into place I am keeping an eye on less protein and a bit more vegetables during the day and meals but aiming to keep my carbs under 20g daily.

At the end I need to remember just to enjoy the Journey too........ Our bodies are so incredibly put together and much more complicated than we can ever imagine. I need to keep going and do what I can do..... eventually the it will kick in.

Here we go for the first day of the NEW YEAR!

BREAKFAST: was two eggs with a sprinkle of cheese, coffee and cream.

I had another 2 mugs of coffee with cream and a T of coconut oil.

Midd morning I had a bowl of chicken spinach soup.

LUNCH: was cucumber, tomato, lettuce, cheese, cold meats and mayonnaise stacks.

Late afternoon just before we left to go to my friends home I had a bowl of cauliflower "potato mock salad" I will rather eat less there than having to eat something that will not be good for Low Carbing.

SUPPER: Our family was invited for supper at another family's home. I had to take chocolate brownies for dessert (no I didn't touch one!) There was lasagna and salad with carrot spears. I had a piece of lasagna ate the meat and red sauce out between the sheets of pasta and my husband ate the pasta. I had some of the green salad and a few spears of the carrots. I skipped dessert but had a few dark chocolate covered coffee beans.

Was a great day low carbing. I just find myself constantly hungry...... wanting to eat the trash can and all in it too :) Will take a few days before my appetite is in line again.
