I have been on a diet journey since my midd twenties, but as I entered my forties the scale climbed me steady up to 89 kilogram and I knew I had to loose weight! After I discovered recently that I was becoming insulin resistant I had a new urgency in my life to loose weight. Not just to loose it but find a lifestyle of loosing it. I decided to go by the way of LOW CARB EATING. This blog is about my journey..... the good and the bad.....

ALL ABOUT TODAY: 3 March
MONDAY the day of many beginnings......AGAIN! Nothing special on the scale this morning. This is where the reality of making this way of eating a LIFESTYLE has to kick in! If the scale goes down or not I'm gong to stick to this way of eating. I know eventually I will get through this plateau......
I was grumbling as I get of the scale this morning..... My husband was standing there hearing my plea.. and encouraged me on how beautiful I look to him..... THANK YOU!
Drinking my liter water today and sticking to my Low Carb Lifestyle.
Cutting out some extra cheese too.
BREAKFAST was 2 eggs fried in olive oil, half an avocado with a sprinkle of feta cheese. Coffee and cream.
Had another three cups through the morning. I get up real early so by ten I had 3 cups of coffee.
Midd morning I had a few smoked sardines for a snack...... I just could not keep it anymore was really looking forward to taste it. Was all what I thought it would be and more.
LUNCH was a bowl of cauliflower cheese soup and a piece of the flaxseed bread with a wedge of tomato. My dessert was a T of freshly made peanut butter... it was so fresh that it was still warm coming out of the machine ;) Also I had a thin slice of smoked salmon... one of my favorite ways to eat fish.
Midd afternoon I had another coffee with cream.
SUPPER will be eggplant boats. I sliced the eggplant in halves, cut out some of the meat part. Fry onion and chopped meat from the eggplant, garlic and then I added some spaghetti red sauce with ground meat to this. I scooped it back into the boats and sprinkled cheese over and baked in the oven at 180dC until brown and the eggplant soft. My family is having spaghetti bolognaise for supper so I thought making this will give me a good meal also with what they are eating. My boats are in the oven and it absolutely smells devine.
Having some steamed broccoli with a bit of garlic butter drizzled over.
A MEAL FIT FOR A KING!
