I have been on a diet journey since my midd twenties, but as I entered my forties the scale climbed me steady up to 89 kilogram and I knew I had to loose weight! After I discovered recently that I was becoming insulin resistant I had a new urgency in my life to loose weight. Not just to loose it but find a lifestyle of loosing it. ALL ABOUT TODAY: 17 March
OH WELL! Stuck with a bit of weight down and then a bit up BUT NOT DROPPING to under 73kg! I'm determined to keep going and make this a lifestyle and reach my goal.... EVEN IF IT TAKES FOREVER! :D
I decided to stick to the basics of Atkins again eating low carb. Last week I was logging all I eat on Fatsecret to see how my average meals add up. I was surprise at how little food 20g of carbs etc. really are.
BREAKFAST: was 2 eggs fried in butter with left over mixed salad from last night. I had the last bit of blue cheese and that's it. It is totally addicting. I want to cut back on cheese. People often complain that cheese keeps them back in weight loss or stall weight loss. Topped breakfast off with 2 mugs of coffee and cream.
LUNCH: was A TOTAL TREAT from my TOTAL AWESOME LOW CARB Neighbor down the street. She popped over late morning with a plate loaded with eggplant boats stuffed with tomato and ground meat. It was set on a bed of lettuce leafs, dotted with a few cherry tomtoes and surrounded with steamed broccoli. I finished it off with a good squirt of mayonnaise. Talk about heaven on a plate and this at a time where I had no idea what I was going to eat for lunch.
I had a t of peanut butter for dessert....... not a good idea sticking to the basics. Will try not to do this again.
Midd afternoon I made myself a great coffee with a heaping T of coconut oil. I am always amazed at how it keeps me full and energetic.
SUPPER: is going to be oven baked chicken. I just need to keep an eye on not eating to much protein. It is often thought that eating Low CArb is all you can eat protein.....BUT IT IS SADLY NOT! I am baking pumpkin pieces in the oven with olive oil and will have 2T of this. My sweetheart daughter made a great tomato and onion salad. I will probably have a T of this too.
