ALL ABOUT TODAY:

 Feeling like this lady today....... JUST KEEP GOING!

No more down on the scale but I'm persevering..... NOT GIVING UP! Somehow it will break through!

BREAKFAST was 2 eggs and cheese served on a green salad left over from supper last night. I had coffee and cream. Now that school started I drink more coffee. About 3 cups a day with cream. I just need to keep an eye on my CREAM not to overdo it.

LUNCH was the bun in a mug served with a thin slice of cheese and turkey ham with tomato.

SUPPER was the cauliflower-egg-cheese patties topped with ground meat served on lettuce. Was a great supper! My family loved the cauliflower patties to my surprise.

I think I might be eating too much cheese. I am going to cut back my cheese to only one meal a day the size of a match box.

Here is the recipe for the CAULIFLOWER PATTIES:

1. I cooked a whole head (small) of raw cauliflower pieces in hot water until soft.
2. I drained and mashed the cauliflower and let it cool down.
3. I stirred in one cup of grated cheese and mixed in 4 eggs with salt, pepper and a pinch of parsley.
4. I dropped spoonfuls on a hot pan with butter and fried on both sides until golden brown. Handle with care the batter is very brittle. The secret is a non stick pan and let it cook well on the one side before turning it over. Was great with a touch of mayo.
