I have been on a diet journey since my midd twenties, but as I entered my forties the scale climbed me steady up to 89 kilogram and I knew I had to loose weight! After I discovered recently that I was becoming insulin resistant I had a new urgency in my life to loose weight. Not just to loose it but find a lifestyle of loosing it. ALL ABOUT TODAY: 16 Janaury
Nothing down more but I'm getting there!
BREAKFAST was 2 eggs fried in butter, had some left over cucumber and tomato salad from last night with this. Coffee and cream!
Midd morning I made some "CHOCOLATE"
I made some COCONUT OIL CHOCOLATE WITH PEANUT BUTTER FILLINGS for me for a treat. ;) I used 4T coconut oil, 2 heaped T cocoa powder, 1t vanilla essence, 2T stevia sweetener powder and unsweetened home made peanut butter. -Melt the coconut oil in microwave on low. -Stir in the cocoa, vanilla and stevia or sweetener of your choice. Scoop into ice tray compartments and drop little spoons of peanut butter inside. Put in freezer to set. ENJOY!
It turned out absolutely yummy! I had two of these and it gave me a good energy kick as it was house cleaning day today.
LUNCH was tuna salad with cheese cubes, tomato, cucumber, ghurkins with mayonnaise wrapped in lettuce leafs.
Off course for dessert I had another one of these chocolates!
I have made something like this before but it tasted so bad I forced myself to get it in as I did not want to waste the coconut oil. These are so tasty I have to tell myself not to want to eat all at one sitting.
SUPPER will be a chicken fillet with mustard and ranch dressing, steamed broccoli, 2T of baked pumpkin and 1 cup of the cauliflower salad.
