I have been on a diet journey since my midd twenties, but as I entered my forties the scale climbed me steady up to 89 kilogram and I knew I had to loose weight! After I discovered recently that I was becoming insulin resistant I had a new urgency in my life to loose weight. Not just to loose it but find a lifestyle of loosing it. I decided to go by the way of LOW CARB EATING. This blog is about my journey..... the good and the bad.....

ALL ABOUT TODAY: 5 November
The eggplant boats was so good, I ate too much of them and I saw the GOOD results on the scale this morning :D Also I had a way to much of the cauliflower salad. This is a good reminder for me again..... even though I'm eating LOW CARB still when I eat toooooo much of Low Carb allowed food it it can cause weight gain.... Oh well it stays a school of learning getting into a lifestyle of Low Carbing.
BREAKFAST was two eggs this morning with feta cheese, tomatoes, cucumber with coffee and cream. Had a coconut choc right after breakfast to keep me full the whole morning.
Had too much coffee today.... I'm trying not to have more than three cups a day.
Late morning I had a small tin of sardines stacked on slices of cucumber with a squirt of mayonnaise.
LUNCH was 2 more halves of the eggplant boats.
Midd afternoon I had celery stalks with a bit of cream cheese.
SUPPER was chicken stroganoff and Flavored Cauliflower pieces in the oven then dipped into mayonnaise. Talk about yumminess on a plate ;)
I tried something new with the cauliflower tonight.
RECIPE: I sliced the cauliflower into pieces or broke them into small pieces. Dipped them in egg and then rolled them in almond flour mixed with a bit of salt, Italian herbs and parmesan sprinkles. Then I ran out of almond flour and pulled in my good buddy Grounded Flaxseed with the same spices. Then at the end just before it went into the oven I drizzled little bit of butter over. The grind almond flour was just amazing. But too much is not good and can cause weight gain. In the future I will aways make a few with almond flour and then the flaxseed too. Was quite surprise at how good the flaxseed even was.
