I have been on a diet journey since my midd twenties, but as I entered my forties the scale climbed me steady up to 89 kilogram and I knew I had to loose weight! After I discovered recently that I was becoming insulin resistant I had a new urgency in my life to loose weight. Not just to loose it but find a lifestyle of loosing it. I decided to go by the way of LOW CARB EATING. This blog is about my journey..... the good and the bad.....

ALL ABOUT TODAY: 31 October
A sweet friend that I regard as an expert in Low Carb eating has helped me to look at the way I eat the last while. My weight has stalled and I need some kick to get me loosing again. She suggested that I eat a bit more carbs over breakfast and increase my healthy fats. I was thinking of more carbs in the form of vegetables like tomatoes and spinach. The healthy fats would be olive oil, maybe nuts, coconut oil etc.
BREAKFAST today was kicked of by the famous bun in a mug with two eggs, coffee and cream.
Midd morning I had a T coconut oil and half and avocado pear with salt.
LUNCH was a tin of tuna with mayonnaise and lots of lettuce and a pickle ;)
Midd afternoon I had a coffee with cream again. I mixed some coconut oil and cacao powder and freezed it in silicone ice trays. I had one cube this afternoon for a snack. Not the best tasting but hey it is something to eat :D
SUPPER was tacos for my family and I had lettuce as a base with tomato, cucumber, a bit of grated cheese, taco spiced ground chicken and mayo drizzled over - taco salad! It stays one of my favorite low carb meals.
I had an early supper as I am going to an event tonight. I do find when I eat my supper earlier in the evening it does make a difference on the scale.
