This picture always reminds me that there is ALWAYS HOPE! There is a way through the most difficult situation. I keep reminding myself that I'm going to weigh my normal weight for my age, height and body build one day! Take hope! It takes time, energy and discipline but it can be done. I'm not speaking out of "I have arrived" but out of feeling so desperate and asking myself if it is worth it........ I KNOW IT IS SO WORTH IT. Keep going!
On this positive note.... I have been coming down in weight. Not where I was but a few hundred grams away!
BREAKFAST was two eggs with a sprinkle of cheese, coffee and cream.
Midd morning coffee again. I made some cake balls dipped in chocolate for my family with left over brownies. I dipped my finger in the dipping chocolate and off course then in my mouth. Later in the morning my daughter found me and asked if I was eating chocolate..... "No!" She looked at me surprised and said: "It does not look like it Mamma!" I had to look in the mirror and found chocolate drizzling down my chin. :D
LUNCH was turkey ham slices with a mixed salad of lettuce, tomato, cucumber and ghurkins. Had mayo and ranch dressing on top.
SUPPER will be a fresh green chopped cabbage with a dressing of sesame oil, soy sauce, garlic and apple cider vinegar. A added a good grinding of black pepper and salt. I have a chicken fillet steamed in the microwave with parmesan cheese sprinkles.
I made flaxseed crackers in the oven today. Came out so nice. Looking forward to enjoy them with cheese. Actually I had a piece with a sprinkle of cheese. Was such a treat!!!!!!!!!!!!!! I can just think of all the possibilities to stack my tuna or egg salad on top!
RECIPE: Flaxseed Crackers
1 cup ground flaxseed
2 eggs
3T parmesan cheese grated
sprinkle of sea salt
1/2t mixed herbs
-Mix well and spread out on cookie sheet. Bake at 180dC for 15 minutes. Turn oven off and leave in to cool down.
