ALL ABOUT TODAY: 8 October

Nothing up on the scale but nothing down either..... being patient determent to stick to it!

BREAKFAST was 2 eggs with tomato and a sprinkle of bacon bits. Coffee and cream.

Had another coffee midd morning..... trying to stick it out until lunch...

LUNCH was the a nice big bowl of the low carb soup.

Had an event at our home and I sat and ate 1/2 a cup of popcorn with my kids..... YES POP GOES THE WEAZEL :D Hope that it will not kick my bud!

SUPPER was roasted chicken in the oven, 2T of baked pumpkin and broccoli egg heaps (photo) I was amazed at how nice this was. Here is the recipe:


BROCCOLI EGG HEAPS:

3 cups finely chopped raw broccoli (I did it in the magimix with the chopping blade)
3 eggs beaten
salt and black pepper
2 cups of cheese
1 onion grated or finely chopped

-Mix well.
-Oil an oven baking dish.
-Form into balls and pack into dish.
-Bake in pre heated oven at 180dC

THEN: My dear friend from down the street also doing low carb rocked up at my door with an OOPSIE BUN with sugar free chocolate sauce and a dolop of cream. My daughters classic comment was: "Will see on the scale tomorrow morning how low carb this was!" :D
