I'm back at my lowest point again today. It feels good. The satisfaction that comes from saying no to so many temptations and really trying and then I'm down on the scale again. I'm weighing 71.4 again!
Hoping to hit 70kg soon. I have weighed 70kg 15 years ago just before I got pregnant with our first daughter. I was 30 years old then and thought I looked great.
Fridays are always a totally out of this world day in school. It was a good day eating Low Carb though.
BREAKFAST was the normal 2 eggs with a sprinkle of cheese, coffee and cream.
Had another coffee midd morning.
LUNCH was a treat from my daughter she made the bun in a mug in the oven for me with normal bread buns for them. It was so tasty, never imagined "the bun in a mug" baked in the oven so good. We had tuna salad with tomato, cucumber, ghurkins, mayo and cubes of cheese. I had a ball.
Had a espresso midd afternoon with cream to give me a good kick in energy to finish school before the weekend starts.
SUPPER was a chicken fillet dressed with bacon bits and a sprinkle of parmesan cheese with the "cauliflower potato mock salad". Yum.
Here is the cauliflower potato mock salad again:
1 head of cauliflower boiled in water till soft.
1/2 a cup chopped ghurkins
1 medium size red onion chopped in little bits
3T of green onion chopped or snipped
2T ready made mustard
3T fresh lemon juice
black pepper to taste
salt to taste
enough mayonnaise to make it look like potato salad.
Even my family that do not really like cauliflower loves this salad.
