Was a real good Monday Low Carbing. I thought after the pasta yesterday that I was going to be sugar craving today. I actually had lots of energy and it didn't feel like a sugar hangover. Not getting on the scale yet....
I drank a good deal of water today but did not make it to one and a half liter, but close. It is raining here so I did not go for my walk....
BREAKFAST was 2 fried eggs in butter with a sprinkle of cheese with left over tomato and cucumber salad from last night. Coffee and cream. Had another half a mug later in the morning.
Midd morning I had more coffee with 2 T coconut oil blended in. IT IS MONDAY I NEEDED EXTRA ENERGY!
LUNCH was 3 cups of chopped lettuce with 2T olive oil, half a hotdog and 2T of blue cheese crumbles. I had 2 cubes of 70% dark chocolate for a treat.
I left after lunch to take a trip into the city. I met up with my dear friend and the LOW CARB TREAT she is I had two needed boiled eggs at her home ;)
Got home just in time for SUPPER and had oven baked chicken with stir fried zucchini, red peppers, mushrooms and eggplant. I had it with a swirl of mayonnaise for a bit of tang.
I got some liquid stevia as a treat and am going to make myself a mug of decaf coffee.....and sit back and enjoy it.
