I have been on a diet journey since my midd twenties, but as I entered my forties the scale climbed me steady up to 89 kilogram and I knew I had to loose weight! After I discovered recently that I was becoming insulin resistant I had a new urgency in my life to loose weight. Not just to loose it but find a lifestyle of loosing it. I decided to go by the way of LOW CARB EATING. This blog is about my journey..... the good and the bad.....

ALL ABOUT TODAY: 24 June
Got on the scale this morning broke neatly into the 75's YES! I'm loosing the grams..... hoping it could be kilograms soon ;)
BREAKFAST was 1 cup of frozen spinach stir fried in butter, 2 eggs neatly broken into hollows in the spinach. A sprinkle of cheese....... THE QUEEN OF ENGLAND COULD NOT EAT BETTER! Coffee and cream.
I went to a friends house and her young boy brought his auntie Karin 2 baby carrots to taste from his garden......... I ATE IT........
I came home and had my coconut coffee with 2T of coconut oil.
LUNCH was 2 cups of lettuce, cucumber, tomato, ghurkins and cheese cubes and a drizzle of olive oil.
We had friends over this afternoon and the brownies were very tempting..... I said NO! I had coffee and cream instead and enjoyed it.
SUPPER was with our dear friends. I made tuna puff pastry pies, potato chips in the oven..... I find it hard to cook NO CARB for quests too. It works out often to be more expensive. For this mamma bear to be able to eat also something I made eggplant boats. I used the smaller eggplant and sliced them in two. Cut out some of the meat, brush with olive oil. Salt and sprinkle with garlic powder, a squirt of tomato sauce and a bit of grated cheese baked in the oven. It was so good I had 4 halves.
The weather is real hot and I for sure got my liter and a half in today!
I normally get dead hungry midd morning. This morning when it turned out to be lunch time I was surprised that I was not hungry yet. It made me think that maybe my breakfast should have more vegetables with the eggs.
