I have been on a diet journey since my midd twenties, but as I entered my forties the scale climbed me steady up to 89 kilogram and I knew I had to loose weight! After I discovered recently that I was becoming insulin resistant I had a new urgency in my life to loose weight. Not just to loose it but find a lifestyle of loosing it. ALL ABOUT TODAY: 10 JUNE

It is summer here on the Aegean and lots of summer vegetables are being sold in the market. The sad thing is I'm missing broccoli and cauliflower. They are my LOW CARB staple vegetables. I fall back on zucchini, eggplant and peppers now. I also eat allot of tomatoes, lettuce and cucumbers.
BREAKFAST was the biggest treat. A dear friend gave me some left over peanut flour. So this morning for breakfast I got totally creative. I made a peanut flour muffin in a mug. I used 2T of peanut flour, 1T olive oil, 1 egg, 1/2t of baking powder and whisked it really well. I baked it in the microwave in a coffee mug for 1 minute. It came out so divine. I cut it in half and kissed it with a good deal of butter and egg salad and mayonnaise. Coffee and cream.
Midd morning I had another mug of coffee in my travel mug on my way somewhere.
I was more hungry than usual today.
LUNCH was 3 cups of chopped lettuce, olive oil, and left over tomato and cucumber salad from last night with chopped chicken and ranch dressing.
My treat was coffee with cream and 2 cubes of 70 percent of dark chocolate. Late afternoon I also had another 2 boiled eggs that a friend gave me.
SUPPER was oven baked sardine halves with eggplant and zucchini oven baked chips. With a lovely onion and tomato salad, cucumber and pickles. What a lovely day LOW CARBING.
Didn't get to walk allot but had about 15 minutes of brisk walking. Drank about a liter of water. The weather has turned cool and I struggle to get all my water in.
