I have been on a diet journey since my midd twenties, but as I entered my forties the scale climbed me steady up to 89 kilogram and I knew I had to loose weight! After I discovered recently that I was becoming insulin resistant I had a new urgency in my life to loose weight. Not just to loose it but find a lifestyle of loosing it. I decided to go by the way of LOW CARB EATING. This blog is about my journey..... the good and the bad.....

ALL ABOUT TODAY: 9 July
The love of my life : COFFEE! Yes that too but actually my family are Argentinian soccer supporters so the blue and white are for them ;) I support Holland! My Dutch Grand Father would have been proud of me.
BREAKFAST this morning was eggs fried in butter with 2T of grated cheese, black pepper and a good old mug of coffee and cream.
Midd morning I had my 2T of coconut oil blended into a mug of coffee.
With the new school program we eat lunch at 13h00 now instead of 12h00. I'm surprise on how easy I have adjusted. I'm not as hungry at one o clock as I thought I would be.
LUNCH was 3 cups of chopped lettuce, half a tomato chopped and 1 cup of cucumber cubes with 2T of feta cheese and 2T of olive oil drizzled over. I stopped adding salt to my salads it makes me retain water and is not necessary.
Midd afternoon I felt like nibbling so I had a t of flavored sugar free coffee creamer just clean like that with half a cup of coffee and cream. WAs a treat.
I try to keep my food and meals simple. It helps me not to get into trouble. We live in a muslim country and pork do not exist, so bacon etc. are not in my diet. I do miss eating it. We also live in a rural area so there is not much around. Low Carb eating is a very strange event here. The stores do not carry anything low carb by brand or even sugar free. I have a little list I have put together when my husband will be going to America for a course soon. Things like no sugar jello, beef jerky, no sugar coffee creamer, stevia etc. are things that are worth gold to me.
Beef and lamb is VERY EXPENSIVE HERE. We just do not eat it. I try to shop when I get into town - which is not often. My protein consist of eggs, tins of tuna, cheese and chicken. Yes, I do get bored but I have no excuse to loose weight the low carb way. I have to make the best of what I have.
Living Low Carb does not have to cost an arm and a leg. I am on a narrow budget and eat very well. Do not think you have to have this and that to be able to loose weight the Low Carb way. You can do it in a very simple way like I did.
I was huffing and puffing coming up the stairs of our house today and was thinking out loud: "Why can't I just get to 70 kilograms and get it over and done with!" My very skinny husband threw some advice: "Cut of your arm then you will weight 70kg!" I had to laugh...... Loosing weight often feels like cutting of an arm or leg...... IT IS SO HARD! But persistence deliver every time. KEEP GOING!
SUPPER - I had my supper a bit early today. I had a small chicken fillet cut into strips fried in butter with 2 cups of sliced mushroom. I am waiting for my husband to get back from his run then I am going to take the dog for our 4km walk.
I had allot of water today. I do not like drinking water but it is getting a habit now to drink enough water through the day. I almost drink 2 liters of water a day especially with the weather being in the mid thirties daily.
I took part in a seven day WEIGHT LOSS CHALLENGE on my Facebook page LOW CARB KARIN. Tomorrow morning is the final weigh in for the week. This far I have lost 1.6 kg since last Thursday yay!
