I have been on a diet journey since my midd twenties, but as I entered my forties the scale climbed me steady up to 89 kilogram and I knew I had to loose weight! After I discovered recently that I was becoming insulin resistant I had a new urgency in my life to loose weight. Not just to loose it but find a lifestyle of loosing it. I decided to go by the way of LOW CARB EATING. This blog is about my journey..... the good and the bad.....

ALL ABOUT TODAY: 28 August
Today was a real good Low Carb day. My day started off with a 200g drop on the scale. I know it is not much but for me it is victory the scale is coming down.
BREAKFAST was two eggs fried in olive oil, coffee and cream.
Midd morning I had a mug of coffee with 2T of coconut oil blended in. THEN I READ on an article that coconut oil can stimulate insulin production and cause weight gain or a weight stall with some people...... OH NO! I am going to leave out coconut oil for a week and see if there is not a better weight loss.
Late morning I had a bowl of the Low Carb soup.
LUNCH was 3 cups of chopped lettuce, 2T of olive oil, pink salt and black pepper.
Midd afternoon I had another mug of coffee with a t of low carb flavored coffee creamer.
SUPPER - We had a friend over for supper. I made spagetti bollogniase and all the trimmings like garlic dough balls etc. I had a salad of lettuce, tomato, cucumber, gherkins and scooped the spagetti red sauce over my salad and topped it off with a bit of grated cheese. Was like a spagetti salad ;) Was actually very good.
