I have been on a diet journey since my midd twenties, but as I entered my forties the scale climbed me steady up to 89 kilogram and I knew I had to loose weight! After I discovered recently that I was becoming insulin resistant I had a new urgency in my life to loose weight. Not just to loose it but find a lifestyle of loosing it. I decided to go by the way of LOW CARB EATING. This blog is about my journey..... the good and the bad.....

ALL ABOUT TODAY: 17 August
I like on Sunday afternoons to sit and think about the week ahead and do some menu planning etc. It is a good time to also get my head in gear for my LOW CARB living this week. Last week was a disappointing Low Carb week......... I didn't loose any weight........ On holiday I went over board eating some fruit etc. The sugar really got to me I picked up some weight and my body is struggling this week getting back to loosing weight. Sad that a bit of a carb binge can get to me this much. I should know better from previous experiences. I know that a sugar trip could kick me back in weight loss for up to two weeks.....
I have a pot of chicken soup on the stove. When I get to this point in a weight loss stall, I cook a pot of soup and eat it for a few days. Normally it helps me to break through the stall.
BREAKFAST: I made an egg, milk and spicy sliced sausage quiche. I served fried mushroom and pepper on the side. Was really nice. Even the kids commented on how tasty it was. I had coffee and cream too.
We went to church and I had coffee in a travel mug with a bit of flavored coffee creamer.
LUNCH was pieces of chicken strips with chopped lettuce and mayonnaise. Coffee and cream for dessert.
SUPPER will be a bowl of chicken soup.
I have had allot of water for today for sure my 2 liters in. I am taking a break and will walk go walking 4km tomorrow evening again.
HERE IS THE SOUP RECIPE:
I boil 1 large chicken breast, 2 chicken stock cubes, black pepper, a pinch of herb with about 1 1/2 liters of water in my pressure cooker for about 2 hours on low. Then I add low carb vegetables. This time I added 2 cups of frozen spinach, 1 red pepper chopped.
I then eat my normal 2 eggs for breakfast but then the soup for lunch with lettuce salad on the side and then again the soup for supper. Normally I do this for three days and it gets me into loosing weight again.
