I have been on a diet journey since my midd twenties, but as I entered my forties the scale climbed me steady up to 89 kilogram and I knew I had to loose weight! After I discovered recently that I was becoming insulin resistant I had a new urgency in my life to loose weight. Not just to loose it but find a lifestyle of loosing it. I decided to go by the way of LOW CARB EATING. This blog is about my journey..... the good and the bad.....

ALL ABOUT TODAY: 1 September
Was down ON THE SCALE THIS MORNING logging in at 76.2!!!!!!! I have lost a whole whopping kilogram the last week! So happy and nervous at the same time. Loosing at the stride of a snail....... but believe me I'm grateful. I have had too many days and weeks and even months with no weight loss to just sit and not be happy now.
What a day!
BREAKFAST was 2 eggs fried in olive oil, coffee and cream.
Was starving by ten and had coffee with 2T coconut oil and a few strips of chicken left over from yesterday.
LUNCH was a big bowl of lettuce salad with tomato, cucumber, feta cheese and 2T olive oil.
I was cooking for friends coming over for supper so midd afternoon I HAD TO TASTE the eggplant roll ups I was cooking ;) I had about 4. Coffee and cream.
SUPPER was with dear friends here. I sliced eggplant in thin strips and roasted it. Spread a thin spread of roasted pepper on it and crumbled feta cheese over and rolled it up. We had this for starters. I made tuna pie in puff pastry shells and my friends brought salads. I skipped the tuna pie and puff pastry but enjoyed the lovely lettuce salads. A friend brought over a chicken chickpea soup and I had two spoons of this over my salad. Was really good.
I find it very challenging to have friends over for meals and stay low carbing. I'm such a social person and eating together is so deeply part of my being......I'm learning now to either just sit there and enjoy the conversation and not eat the carbs or tweak it so I can eat it too and not feel guilty the next day. I made waffles and ice cream for dessert and it smelled like heaven....... But I know if I just eat a bit I'm back at square one having to wait a few days before I will loose weight again.
I'm on a roll again and hoping to keep loosing.......
