I have been on a diet journey since my midd twenties, but as I entered my forties the scale climbed me steady up to 89 kilogram and I knew I had to loose weight! After I discovered recently that I was becoming insulin resistant I had a new urgency in my life to loose weight. Not just to loose it but find a lifestyle of loosing it. I decided to go by the way of LOW CARB EATING. This blog is about my journey..... the good and the bad.....

SEPTEMBER 4
Nothing more down on the scale today...... Not bad for 500g in a day Monday...... Today I was hungry as a bear and probably ate too much. Well, tomorrow is another day.
BREAKFAST was leftover tuna and egg strips from the kids supper last night. I ate it with cucumber strips. Coffee and cream.
Had my coconut oil coffee midd morning. I also had a slice of the flaxseed bread with about a T of feta cheese.
By late morning I was ready to swallow the trash can. I fried spicy sausage circles set it on top of cucumber circles and topped off with mayonnaise. Was just right ;)
LUNCH was 3 cups of chopped lettuce with 2T of olive oil, pink salt and black pepper.
Had my usual dessert coffee with 1t of coffee creamer after lunch.
The afternoon went better I wasn't so hungry.
SUPPER was this delicious looking salad at the top of the page. Used ground chicken and fried it in butter. Sprinkled a bit of soy sauce over, sesame oil and a bit of ginger. I used chopped red cabbage for the base and dressed it with a dressing of lemon, mustard and olive oil. Topped it off with roasted sunflower seeds.
Didn't walk the dog tonight. My daughter had extra school to do. I think I'm going to go on the elyptical walker for 20 minutes.
I CALL IT A GOOD DAY!
