I have been on a diet journey since my midd twenties, but as I entered my forties the scale climbed me steady up to 89 kilogram and I knew I had to loose weight! After I discovered recently that I was becoming insulin resistant I had a new urgency in my life to loose weight. Not just to loose it but find a lifestyle of loosing it. ALL ABOUT TODAY:
Nothing new on the scale this morning..... DEAD QUIET!
Was a great day though filled with many food temptations.
Breakfast was two boiled eggs sliced and stacked on cucumber slices with a little bit of mayo and sprinkle of black pepper. Off course coffee and cream on the side.
Lunch was chicken pieces in a curry cream sauce with an eggplant salad with tomato and onion.
THEN I went with my mother in law and friend to a Swiss coffee chocolate shop. Had a mug of coffee and one dark small chocolate spoon THAT WAS ALL!
Supper was a bowl of the FAMOUS LOW CARB CHICKEN SOUP!
Normally when I stall on weight loss I make this low carb soup and eat if for lunch and supper for a few days often with a green salad. It normally pulls me out and get me loosing weight again.
Here is the recipe:

LOW CARB MIRACLE SOUP
2 chicken breast sliced
1 onion sliced
2 chicken cubes or enough salt to taste
good grinding of black pepper
2 cups broccoli chopped
1 cup chopped baby marrows
2 cups chopped or frozen spinach
one red pepper chopped for color.
Add enough water to make soup for a few days.
Boil for 2 hours on low heat.
