ALL ABOUT TODAY: 20 January


FLAX SEED BREAD:  


The highlight today is the flaxseed bread I baked:

2 cups ground flaxseed meal
1T baking powder
5 eggs beaten
1/2 cup water
1/3 cup olive oil
1t salt

-Mix well and pour into a loaf pan. Bake at 180dC for 20 to 30 minutes.

I made this today and wow it was a sure joy to have bread. Bread that is actually in slices :)

BREAKFAST was 2 eggs fried served with cucumber and tomato salad that was left over from yesterday. Coffee and cream.

LUNCH was 3 slices of the flaxseed bread with cheese and tomato.

Midd afternoon I had a special coffee and cream with a sweet friend.

Late afternoon I sliced some cucumber circles dressed it with a dollop cream cheese and a tiny drop of sweet chili sauce on each slice. Was the best snack in years.

SUPPER is going to be baby meatballs and spicy sausage circles stir fried with onion, garlic, broccoli, cauliflower, mushrooms and cabbage topped with a drizzle of soy sauce. My family will enjoy their stir fry with pasta bow ties and mamma bear will enjoy hers in a bowl.

HOW AM I DOING:

I thought of including this part in the blog just to share my emotional struggles with Low Carb Eating. My desire is to make Low Carb Eating a lifestyle. It just feels without accountability it seems an impossible thing. At times I feel so discouraged trying so hard to fight this battle to loose weight. I'm a stay at home mom home schooling my three children....... and food is a big part of my day as I cook all three meals and my day is often in the kitchen for hours. I take hope in the fact that Low Carb eating does work. That there is a way to loose weight and keep it there.




It helps me to look back over my before and where I am now photos to see where I have come from. I definitely do not want to go back to my old ways!

ALL ABOUT TODAY: 19 January


A very sweet friend and someone that sets the tone in low carbing noted this morning that she thinks I eat very little........ I looked over the last few days and yes, I have not been eating enough. Often over weekends it goes crazy between events and trying to feed my family breakfast, lunch and supper. I neglect myself......

The hard thing about Low Carb living is if you eat too much protein you will pick up weight. Too much carbs and you will pick up. Eating too little and you will stall. It stays a fine art between proteins and carbs. Then to add to the confusion we all handle protein and carbs different. Each person need to find a place that suits their body.

Yet again I want to encourage us all to be accountable and open and honest about your struggles and victories low carbing. Just this afternoon I was quickly shopping for a few food articles in a store for the week. I was coming home from church and was starving as I had breakfast at about ten this morning and the cake etc. at church I just had to give a skip. In the store they had dark chocolate covered peanuts. Everything in me wanted to buy a few and just EAT IT ALL UP! No one will know? It is just a bit? Just 8 carbs for 25g?????? I WAS TEMPTED FAR ABOVE MY STRENGTH..... it was 3 in the afternoon JUST EAT IT YOU DESERVE IT!!!!!!!!!!!!!

Was so happy my mind kicked in. I had to put the bag down and tell myself NO! Otherwise I had to come and tell :D It would have put me back probably a few days loosing on the scale..... As hard as it was I just knew being accountable was a big help in this situation to say no.

Find someone you can share with. Join my facebook page and come tell, I promise I will not shuff you off I know how it feels to struggle getting it together. People were patient with me and supported me when I knew nothing about Low Carb eating.

BREAKFAST was spicy sausage cubed, grated cheese, bit of cream with egg quiche. Had tomato and cucumber on the side. Was such a good filling breakfast. Coffee and cream.

LUNCH - SUPPER: I got home at four and a good portion of stir fried cabbage with garlic, black pepper and olive oil. Had pieces of roasted chicken on top.

Made myself an espresso coffee with cream for dessert. I will probably not eat anything more this evening just a nice hot cup of cinnamon apple tea.

SOME GREAT IDEAS FOR THIS WEEK:

-I have not been drinking enough water. Want to make sure I drink more.

-I would want to make sure I eat enough but not more than my 20g of carbs a day and a good portion of protein at every meal.

-I want to try out some new recipes to get me going being excited Low Carbing.

-Not going to make the coconut oil chocolates soon again. I think the artificial sugar has stalled me....... STAYING AWAY! There is a few still left in the freezer will leave them for next weekend if I have reached my goal of falling under 70kg!

ALL ABOUT TODAY: 18 January


Was up a kilogram this morning....... could not believe it. Out of the blue! Had a good day food wise today hoping to see the scale drop. Saturdays and Sundays are always challenging as it is not in schedule as our family either go some where or we eat when we feel like it.

BREAKFAST was 2 eggs fried with a sprinkle of cheese. Coffee and cream.

LUNCH was a piece of chicken with mayonnaise. It was on the run as I was getting ready to go to a baby tea of a friend. I knew there would be no protein hanging around so I had to eat something before I go.

I had 4 of the coconut chocolates to calm my sweet tooth on my way out the door :)

I had some eggplant dip at the baby tea and just ate it with a little spoon. Was so good.
THEN I had 2T of the chocolate cream cake it was more cream than cake. Hoping that the cream would not do too much damage.

SUPPER was a big lettuce salad with lemon and olive oil.
Tomorrow is another day!

ALL ABOUT TODAY: 17 January

I was down to 70.1 this morning....... going to break 70kg this weekend! :D

BREAKFAST was a two egg omelette with a T of tuna and grated cheese. Coffee and cream.

Midd morning I had 3 cubes of the coconut chocolate with cucumber circles spread with cream cheese.

LUNCH was a bowl of the Chinese egg drop soup. It was the last bowl of the batch. I really enjoyed the soup and will make it again.

Midd afternoon I had another coconut chocolate. These things are addicted going to limit myself to only two a day ;)

I made 2 Turkish meat kebabs and enjoyed as a snack was starving late afternoon.

SUPPER was 1 more of the meat kebabs, 1 cup cauliflower salad, 2T of carrot pineapple salad.

ALL ABOUT TODAY: 16 Janaury


Nothing down more but I'm getting there!

BREAKFAST was 2 eggs fried in butter, had some left over cucumber and tomato salad from last night with this.  Coffee and cream!

Midd morning I made some "CHOCOLATE"



I made some COCONUT OIL CHOCOLATE WITH PEANUT BUTTER FILLINGS for me for a treat. ;) I used 4T coconut oil, 2 heaped T cocoa powder, 1t vanilla essence, 2T stevia sweetener powder and unsweetened home made peanut butter. -Melt the coconut oil in microwave on low. -Stir in the cocoa, vanilla and stevia or sweetener of your choice. Scoop into ice tray compartments and drop little spoons of peanut butter inside. Put in freezer to set. ENJOY!

It turned out absolutely yummy! I had two of these and it gave me a good energy kick as it was house cleaning day today.

LUNCH was tuna salad with cheese cubes, tomato, cucumber, ghurkins with mayonnaise wrapped in lettuce leafs.

Off course for dessert I had another one of these chocolates!
I have made something like this before but it tasted so bad I forced myself to get it in as I did not want to waste the coconut oil. These are so tasty I have to tell myself not to want to eat all at one sitting.

SUPPER will be a chicken fillet with mustard and ranch dressing, steamed broccoli, 2T of baked pumpkin and 1 cup of the cauliflower salad.

ALL ABOUT TODAY: 15 January


Wasn't such an exciting day food wise...... But it was a good Low Carb day.

BREAKFAST was two eggs fried topped with a sprinkle of cheese. Coffee and cream.

Had more coffee midd morning.

LUNCH was a bowl of the chinese chicken soup, bun in a mug topped with cheese, mayonnaise and turkey ham with some chopped tomato and cucumber.

Midd afternoon I had another few pieces of turkey ham with a bit of cheese and a cup of sliced cucumber and a T of peanut butter with a T of steamed cinnamon apple.

SUPPER will be another bowl of Chicken soup.

ALL ABOUT TODAY: 14 January


I'm in a stall for a few days. It does not worry me as I had the flu and dropped quite a bit of weight in a short time. I just need to wait it out patiently and get going.

BREAKFAST was 2 eggs fried with a bit of grated cheese. Coffee and cream.

I tried not to snack in the morning as I knew about a special lunch coming up:

LUNCH was a big treat by my husband as it is our 19th wedding Anniversary today. He took met out for lunch. I had a Chinese beef and vegetable stir fry and asked that they would replace the side dish of rice with salad. I thought YES A LOW CARB LIFESTYLE IN MOTION! My husband ordered my favorite sweet and sour but I knew the sugar was just too much and skipped it.

THEN............... I had chocolate! Too much for a low carb diet ;( How typical!

I skipped supper as of the big meal out and the chocolate........ Drinking allot of water and going to sip on herbal apple cinnamon tea for the evening. Oh well tomorrow is a new day and then I go on again. Just knowing that the few day stall is for sure going to be influenced by the chocolate.........

ALL ABOUT TODAY: 13 January


First day of a new week and often the beginning of many beginnings for dieters ;)

BREAKFAST was the last piece of the broccoli quiche, half an avocado stuffed with tomato and cucumber pieces. Coffee and cream.

LUNCH was the CHINESE EGG DROP CHICKEN SOUP


A sweet neighbor and friend send me baked eggplant boats filled with vegetables, feta cheese and ground meat over for a treat too. It was so good! I ate the two boats and the soup.

Midd afternoon I was hungry again I had 1T of peanut butter and 1T of coconut oil and that did it.

I think with the flu I ate too little.... and it kicked my body into craving sugar again and a weight loss stall. Today I'm trying to take in more carbs and fats to get back to loosing weight again. What a strange business weight loss is: Eating too much causes weight gain and often eating too little prevents weight loss...... STRANGE! is all I can say.

Had more coffee and cream midd afternoon.

SUPPER will be left over barbeque chicken from yesterday and I wrapped chicken strips in lettuce leafs with ranch dressing. OH and off course :D I had another bowl of the soup! just to hang me over until supper. I baked some eggplant circles in the oven with olive oil and a sprinkle of salt. Will have a few of this too. As I sad I have sugar cravings again so I had a T of chocolate chips and that it it!!!!!!!!!!!!!!!!

ALL ABOUT TODAY: 12 Janyuary


BREAKFAST was a nice size piece of the broccoli egg quiche. Coffee and cream and half an avocado with salt and pepper.

Midd morning I had some more coffee with cream and 4 pieces of cold meat wrapped around a bit of cream cheese.

LUNCH/SUPPER we ate at about four: I WAS STARVING! I had the cauliflower mock potato salad, chicken, turkish ground meat kebab with a piece of spicy sausage.



I'm still trying to get rid of the flu, as soon as I feel its gone then it starts back up again.... :(  .. My appetite comes and go......which is not a bad thing for a girl that loves to eat ;) Hoping that this week I will drop as well as I did last week.

ALL ABOUT TODAY: 11 January


In the midst of the flu I'm dropping the kilograms ;) Wish it was as easy as that?..... Down to 70.3 kg this morning though. Looking forward to reach 69.8kg this week..... was my lowest point before I stalled and then climbed the Christmas pick up!

BREAKFAST was a two egg omelette with strips of turkey ham and cheese. Coffee and cream.

Midd morning I had half an avocado pear.

More coffee and cream later in the morning.

LUNCH was tuna left over salad that had cucumber and tomato slices with a bit of cheese cubes.

Midd afternoon my daughter made gherkins, cheese cubes and hot dogs circles on tooth picks for a snack. I had 4 of these.

SUPPER was chicken pieces with spicy sausage, cucumber cubes wrapped in lettuce leafs with ranch dressing.

I have not lost this well for quite some time. I'm wondering about the Carb Cycling approach. Where people that normally do low carb go on days where they eat more carbs than usual and then some days no carbs.

ALL ABOUT TODAY: 10 January

I was down to 70.8kg this morning! I have the flu and was in bed all day. When I pass coffee then I know I'm really ill! Hoping that it will pass soon.

BREAKFAST was a slice of the broccoli quiche with half an avocado with a tiny cup of coffee and cream.

I have no appetite and feel like nothing to eat.

LUNCH was a cup of tuna salad with cheese cubes, tomato and cucumber pieces.

Midd afternoon my daughter bless her heart surprised me..... with melted dark chocolate chips and almond treats. I had about a T of chocolate and 5 almonds.

THEN the other one came and dropped of a bowl of popcorn while we were watching the amazing race in bed....... I had a cup of popcorn :D

SUPPER will be a chicken filet fried in butter with zucchini strips. Did I mention my family is having pizza! ;)

Was not the best LOW CARB DAY but I'm really hoping to feel better tomorrow and get going again.

ALL ABOUT TODAY: 9 January


I'm in bed with the flu. Have been traveling through our family and now it's my turn ;)

I was down another 300g on the scale this morning. Now I'm down to 71.0 wish it was rather 70.9....

BREAKFAST was in bed this morning as a treat from my eleven year old daughter. When she said I should stay in bed and breakfast was on her I was a bit worried at first wondering what she will come up with. I was in for a good surprise. It turned out to be scramble eggs, half a cup of tuna, half an avocado stuffed with tomato and cucumber salad. Coffee and toooooo much cream ;)

LUNCH was 5 pieces of cold meat with a strip of cheese wrapped with a bit of mayonnaise.

Had a T of peanut butter midd afternoon and t of dark chocolate chips. Coffee and cream.

SUPPER is very tempting! Rather my family's supper is tempting! I am making the famous coke chicken for my family as we have no diet pepsi in the house. It smells like heaven... and I can't eat it! I am going to skip their chicken dish as the sugar would throw me off. Rather I cooked a chicken thigh in the microwave for me and dressed it with ranch dressing. I try to eat my protein earlier if possible as it normally helps me not to be so hungry when supper comes around (and then I might just eat to much of the wrong things).  I am going to have a cup of zucchini strips fried in butter and garlic when supper comes around later with my family.  I don't feel much like eating tonight......... I know I might have the flu when my appetite is not ticking as usual! ;)

ALL ABOUT TODAY: 8 January



It can only be a great day when I'm down on the scale to 71.3!!!! I have lost 2.2kg this week!!!!! It feels great on the one side and then on the other I am wondering when it will come to a plato or halt.... again. I am looking forward to get to my lowest point of 69.8 again and then heading out to my goal of 65kg.  While it's going I'm going with! I'm so motivated a cheat is not even an option...... The price is to high to pay.

BREAKFAST this morning was half an avocado chopped into an omelette with tomato and mayonnaise. Coffee and cream.  It kept me full all morning.

LUNCH was a great quich idea I found on a low carb page recently. I used 10 medium to small size eggs, 1 cup of milk, 2 cups raw chopped broccoli, 1 cup salami, chorizo or spicy sausage chopped and one cup grated cheese. I just layered this in a oven proof dish and baked it in the oven. Even my picky eaters had seconds. Way to go LOW CARB MOM! ;) I made a side salad with tomato and cucumber and had about half a cup of this too.

Midd afternoon I had 1T of coconut oil and home made peanut butter and another coffee and cream to pick me up.

SUPPER was a tin of tuna mixed with a touch of mayonnaise, chopped gherkins and wrapped in lettuce leafs.

This is a short clip on Low Carb eating that meant so much to me. This man is highly respected in the sport community all over the world. I was touched by his humility and openness on low carb eating and how it changed his life.

My husband really likes this man and was stirred by this clip to see how he can change his  own lifestyle and move into more healthy eating habits himself. He does not need to loose weight but I'm thinking of our kids eating a high carb sugar diet and him struggling with reflux.

Todays lunch was a real low carb lunch and the kids and my husband loved it. We will take it slowly but trust that good changes will come out of this.

ALL ABOUT TODAY: 7 January


What a day! It's on its head!!!!!!!!!

BREAKFAST was half an avocado, salt and pepper. Coffee with cream.

Midd morning I had a T of coconut oil and a slice of cheese melted in the microwave.

LUNCH was a big salad of shredded lettuce with olive oil and lemon (my new favorite). Six mini meatballs and a bowl of chicken soup.

Midd afternoon I was at a meeting and a tiny sliver of a pear and one grape. Coffee and a touch of milk.

SUPPER was a chicken thigh dressed with mayonnaise, cucumber and tomato..... I'm eating something before leaving  to an event where I'm taking the birthday cake. Will not eat it but maybe there will be a bit of salad from the meal. Hoping!

ALL ABOUT TODAY: 6 January


I was down to 71.8kg this morning! Yay!!!!! I'm dancing the jig! I keep telling myself just keep going.... keep going! It seems like an agonizing slow process reaching my goal and Christmas with all its treats to eat did not help me to get there. Like they say, it is not about the falling but getting back up after you have fallen!

It is very encouraging on people commenting on how much weight I have lost. Today when I was walking back from school after dropping of my son a lady I do not know stopped me and told me how good I looked and she can see that I have lost allot of weight. Little encouragements like this keeps me going.

BREAKFAST this morning was 2 eggs with a avocado, tomato, cucumber and a bit of carrot salad. With coffee and cream.

LUNCH was omelette for my family with cheese, hot dogs chopped and tomato. As I all ready had eggs for breakfast I was thinking of having something else but I just had some omelette with them. I thought that eggs can only be a good protein source.

I had more coffee with cream and a T of coconut oil midd afternoon.

SUPPER will be Malaysian "bobotie" ground meat for my family. I was hoping I could have some too but then off course the bread inside so I skipped it...... I cooked a chicken fillet in the microwave and fried in slowly in butter and curry in a pot for me. Goodness me! With steamed broccoli and about 2T baked pumpkin with cinnamon. I'm not deprived of anything!!!!!! :D

ALL ABOUT TODAY: 5 January


BREAKFAST this morning was scones, cream and jam for my family and a friend visiting. I was very grand and made the "bun in a mug" for myself. I  sliced it in circles and then dressed it with marmite and cheese and then cream with a sprinkle of cinnamon. Enjoyed it with coffee and cream. I did not even drool on my family's scones ;)

We came home at four this afternoon after being out all day: the only eatery around were pretzels, cream cake, pastries and chocolate cake. I was able to stay strong and came home and had a T of freshly home made peanut butter to pick me up.

SUPPER was freshly baked fish from the fish market. I don't even know what the fish is called but it was delicious. I had a big bowl of shredded lettuce dressed with lemon and olive oil for salad. Had a few pieces of tomato and cucumber added.

ALL ABOUT TODAY: 4 January


I just love Saturdays with my family relaxing. We went for a long walk in the forest UNTIL someone fell into the creek :D

I was down on the scale this morning to 72.3! I started off on the first with 73.5 so just a bit more down than a kilogram. Hoping to hit my lowest point of 69 again soon!

BREAKFAST late morning was a 2 egg omelette fried in butter with grated cheese. Coffee and cream.

LUNCH was steamed cauliflower dipped in egg and fried served with ranch dressing. Had a chicken fillet with mayonnaise, with an egg omelette with the little pieces of cauliflower that was left over and too small to fry. Was a really nice lunch.

Had 4 small cubes of 80% dark chocolate coming to 4grams of carbs.

SUPPER will be a mixed salad of lettuce, tomato, cucumber lettuce and feta cheese.

So grateful my appetite is decreasing and I'm not wanting to swallow the trash can and all it's content too :D

ALL ABOUT TODAY: 3 January


GOING FOR GOLD!

The weather is quite cold where we live...... I do not feel like eating salad. I'd rather want protein and hot soup.

BREAKFAST was a treat from my daughter this morning. A two egg omelette with cheese. Coffee and a bit of coffee creamer - we are out of cream!!!!!!!!!!!

Had another 2 mugs of coffee with a bit of creamer.

Late morning I had a T of coconut oil and 1T of chicken left over from last night.

LUNCH was 1 cup of the cauliflower "mock potato salad" and two Turkish ground meat kebabs.

I was out this afternoon and had a good time not feeling hungry and wanting too eat all that is in sight.

SUPPER Friday evenings are traditionally pizza night. I made my family the usual pizza and then I had a bowl of chicken spinach soup to curb my hunger and I will make the bun in a mug with pizza sauce and cheese melted in the oven.

Hoping to have a good weekend weigh down!!!!!!!!!

SUPPER TONIGHT!


SUPPER TONIGHT!

CAULIFLOWER "MAC AND CHEESE"

Chop the cauliflower into florets and steamed till soft.
Put into oven dish, sprinkle with salt and black pepper
Pour 1/2 a cup cream into the dish
Sprinkle with grated cheese
I added a bit of bacon sprinkles for taste and color
Before serving sprinkle with chopped green onion



DIET PEPSI CHICKEN

-Slice the chicken filets (I used 4 medium size filets) in strips
-Fry in pot with butter until cooked
-Add a tin of diet pepsi, 1/3 cup soy sauce and 1/2 cup ketchup
-Add a good grinding of black pepper
-Cook on low heat covered for half an hour
-Serve on top or next to cauliflower casserole.



ALL ABOUT TODAY: 2 January

I was down this morning to 72.8! I am so glad to see a down on the scale after the "picking up of the Christmas Season" :D I suspect that it is more water weight than anything else but it is down!!!!!

BREAKFAST - was the bun in a mug this morning topped with a fried egg, butter and a sprinkle of cheese. Coffee and cream.

Had a T of coconut oil midd morning and a T of tuna fish.

LUNCH was a bowl of chicken spinach soup and on the side cucumber topped with cream cheese and a cup of the cauliflower mock potato salad.

Had another 2 cups of coffee with cream in my little espresso cups.

I was cleaning the house today and just needed that extra kick so I had a t of dark chocolate chips. I find if I eat only a t at a time it works better for me than having a slab of chocolate where I only break off a cube at a time.

SUPPER is going to be Hong Kong Chicken. I cooked the chicken strips in a tin of Diet Pepsi and soy sauce and half a cup ketchup and topped it on top of steamed cauliflower with a bit of cream baked in the oven with a bit of cheese on top and is going to have steamed broccoli drizzled with a bit of butter on the side and 2T of steamed pumpkin. Yum!

ALL ABOUT TODAY: 1 January


Weighed in this morning at a whopping: 73.5kg! :D It is a new year and I'm all geared up to get going and walk this Journey loosing weight the Low Carb Way! I have hope that this year I will reach my goal weight of 65kg!

Through this holiday Season I have realized that making this way of eating a lifestyle is still far off for me.... My hope is to also this year learn more about Low Carb eating and bringing it into a place that I can call this a Lifestyle.

I have again come to a place where I have realized my need for accountability in reaching my goal. I have decided to go ahead and commit to this blog to reach my gaol. Each one of you are important in this process and I'm hoping that you could be encourage to walk this Journey with me in victory.

During this time of just enjoying some holiday food ;) I have started to get into old habits of eating larger potions of meat etc. Now to get myself back into place I am keeping an eye on less protein and a bit more vegetables during the day and meals but aiming to keep my carbs under 20g daily.

At the end I need to remember just to enjoy the Journey too........ Our bodies are so incredibly put together and much more complicated than we can ever imagine. I need to keep going and do what I can do..... eventually the it will kick in.

Here we go for the first day of the NEW YEAR!

BREAKFAST: was two eggs with a sprinkle of cheese, coffee and cream.

I had another 2 mugs of coffee with cream and a T of coconut oil.

Midd morning I had a bowl of chicken spinach soup.

LUNCH: was cucumber, tomato, lettuce, cheese, cold meats and mayonnaise stacks.

Late afternoon just before we left to go to my friends home I had a bowl of cauliflower "potato mock salad" I will rather eat less there than having to eat something that will not be good for Low Carbing.

SUPPER: Our family was invited for supper at another family's home. I had to take chocolate brownies for dessert (no I didn't touch one!) There was lasagna and salad with carrot spears. I had a piece of lasagna ate the meat and red sauce out between the sheets of pasta and my husband ate the pasta. I had some of the green salad and a few spears of the carrots. I skipped dessert but had a few dark chocolate covered coffee beans.

Was a great day low carbing. I just find myself constantly hungry...... wanting to eat the trash can and all in it too :) Will take a few days before my appetite is in line again.

AROUND THE MOUNTAIN AND BACK AGAIN!


I'm reading the title of this blog with a grim smile....A LIFESTYLE! Maybe not yet! On the other hand I have been doing this for a year now without cheating much at all. This two week break from eating strictly LOW CARB has been a good but devastating break.

GOOD - I had a good time just celebrating and eating things that I normally crave and drool over. Was such fun to eat Kentucky fried chicken with my family. I did not just freely ate everything in front of me but ate some cookies and chocolates from time to time as a treat.

What really kicked my bud was the ginger cookies I baked and frosted with my kids. Oh! Oh! it was just so good and I found myself at every crave to just dig in and eat another one. The terrible thing about sugar it is grabs you by the neck and you fall into more cravings and feeling terrible and then it is a vicious cycle..... of craving and eating.

BAD - I have picked up 2kg in ten days! That is so hard to see. I reflect on how long it took me to loose that 2kg and it breaks my heart.

On the other hand I feel, yes I had a bit of a "break out" and I'm not going to stay there but coming back and going forward.

I want to reach my goal of weighing 65kg this year! It might take a while but I'm going for my goal.

THE BEST PLACE TO START:
-Reading the Atkins book again and going on strict INDUCTION for a week and then go from there.
-Making sure I eat enough protein and carbs. Keeping my carbs under 20g a day and my protein at about 70g a day. (not the grams on the food scale but actually the grams of protein within the protein itself).
-Drinking enough water - this is actually a tough one for me.
-Trying to incorporate more exercise into my day. I walk my son to school and back every day but I need more than that. I do good walking the dog. I have a walking route with him and aim for 3km plus a day.
-Being accountable on this blog and my facebook page. Nothing like to come and tell the truth on what I ate :D

I'm back on this blog the first of January again. Now you all know what I'm going to do the next few days ;) No! not eating CARBS and ginger cookies :) but reading the Atkins basics again and planning some menus and great food ideas. Preparing my heart and mind to do this! Pulling myself out of a sugar hole and getting into healthy eating!

COME ON JOIN ME! There is no hole to deep that you can not get out of!!!!!!!!!!!!

ALL ABOUT TODAY, CHRISTMAS UNTIL NEW YEAR!

THEN AND NOW!!!!!!!!!




I'm looking back today: Christmas last year I decided this is enough I'm going to loose 20kg this next year. Now it is almost a year ago and I have lost almost 17kg. I wish it was 20 but it just didn't come easy.....

It was a hard road for me. I think I was tested to my limits....... Also I had to decide if I will continue or just be at peace where I am and what I have accomplished. I would like to go on and reach my goal weight of 65kg come what will. It may take a while to get there but the new year is ahead and I'm taking it head on.

Tomorrow our family is going to take our holiday break from school and work. I'm also going to take a break from the blog and will be back the FIRST OF JANUARY to take the new year with stride.

I want to wish you a BLESSED CHRISTMAS and WONDERFUL WEIGHT LOSS NEW YEAR ahead!

ALL ABOUT TODAY: 18 December


Found some batteries for my digital weighing scale at a watch store today! A bit nervous getting on the scale after a week of not weighing...... ;D

BREAKFAST was tuna, egg quiche leftovers from my family's supper last night with a tomato sliced. Coffee and cream.

Midd morning coffee and cream with a T of coconut oil.

LUNCH was cauliflower soup. Just one bowl this time!

I was out this afternoon looking for Christmas gifts for my family..... I was starving when I got home. Had half a piece of tuna pie to carry me over to supper.

SUPPER will be home made chicken schnitzel (mine is well dipped in egg with very little crumbs) with oven baked vegetables - eggplant, bit of carrots, cauliflower and broccoli.

Was a good food day. Hoping to see as good news tomorrow morning!!!!!!!!

ALL ABOUT TODAY: 17 December


They always say that stress do not encourage weight loss. Wow I have been really experiencing loads of stress about my teenage daughters school for next year. It is also a good opportunity for me to learn to trust God knowing that He cares for us......
I have been very surprise knowing that in the past when I get stressed out like this..... I run to eat and nibble constantly on food.... I can see that I have grown in this area this last year. I am so grateful for that.........

BREAKFAST this morning was half a bun in a mug with half a tin of tuna with mayonnaise, coffee and cream.

Midd to late morning I had the other half of the bun in a mug with the tuna and topping.
With coffee and cream.

LUNCH was tomato circles with soft cheese as a topping, I was not that hungry as I had the bun in the mug late morning.

Midd afternoon I visited a friend and had carrot sticks with a cream cheese dip and a handful of nuts with coffee.

SUPPER is going to be out at an event. Before I'm going tonight  I am having a piece of chicken, a bit of broccoli, a few circles of cucumber and a bit of lettuce as I am not knowing what I would get at the event. I have to take a savory bread dish (off course not what I can eat from ;) I will probably not have anything to eat there as it is a potluck and salads are scarce at these places.

ALL ABOUT TODAY: 16 December


BREAKFAST was 2 left over boiled eggs from yesterday's family breakfast. I mashed it with mayonniase and made a salad. Coffee and cream.

Midd morning I had another boiled egg from the left overs (good they are done now :) Also had 1T of coconut oil.

LUNCH was 2 bowls of cauliflower soup, with bacon bits,  parmesan. Yes I made another batch. It is so good and filling and keeps me full. Added a T of grated cheese with a few strips of turkey ham. Lunch at its best!

Late afternoon I had a few cocktail chicken meatballs. Not sure what was in it but probably not all pure chicken. Also had another coffee with cream.

SUPPER was stir fried cabbage with bacon bits. A chicken thigh with mayonnaise and spicing. Cucumber and tomato circles for salad.

Amazing after yesterdays chocolate pig out I do not have sugar withdrawal today. Maybe I'm still running on the chocolate ;D

ALL ABOUT TODAY: 15 December


So this picture above is a good message for me today! My daughter gave me one of these chocolate chips boxes with the compartments....... 2 chips have have 4 carbs. So from time to time.... actually a long time ago last...... I take two when I feel like it. Well today I felt like it and something in me screamed: "IN TEN DAYS ITS CHRISTMAS!!!!!!" So I ate the whole thing!!!!!!!!!!........... Oh well!!!!!!! TOMORROW I go on again. I have been doing really good with no cheats for a long time......... That "TOM" etc.

BREAKFAST was the bun in a mug for me with two eggs mashed with mayonnaise on top.
Coffee and cream. I really enjoyed my breakfast and my family's waffles with strawberries and cream was not at all a problem ;)

We came back late afternoon from church and I ate a few peanuts in the car back home I was starving.

SUPPER was chicken pieces with moyonnaise and cucumber circles and a T of coconut oil.

AND THEN THE CHOCOLATE for Christmas ;D

Looking forward to this week and going strong eating Low Carb. I want to make sure this week that I eat about 100 grams of protein a day and keep my carbs under 20 net carbs. Also to make sure I keep my fats up. It is quite the art!

Hope there is no shocks on the scales tomorrow morning!!!!! :D

Was a day at home with many visitors.

BREAKFAST was 2 eggs with feta cheese fried in olive oil. Coffee and cream and another and another cup.

Was nibbling midd morning on some cucumber, tomato and a bit of carrot sticks.

Had a bowl of the last cauliflower soup at around midday.

LUNCH WAS AT 2 THIS AFTERNOON I was starving by then. Was baked chicken in the oven with stir fried broccoli and a lovely salad on the side was eyeing with desire the lovely turkish rice my family was enjoying with their meal. But no I had none.

Had some more coffee with our guests. I skipped supper as I felt so full from late lunch still. Had 1T of coconut oil.

ALL ABOUT TODAY: 13 December





Just got home a bit ago. Was a long day.....

BREAKFAST was 2 eggs with feta cheese, coffee and cream.

Had someone over this morning and for lunch at our home..... for sure being busy helps keeping me from getting into trouble with CARBS ;)

LUNCH was 2 bowls of the Cauliflower, parmesan and bacon bits soup.

I had to attend an event at the Turkish school. I was asked to bring a massive bowl of popcorn and I knew there was not going to be anything low carb.

I ate a little bit of bulgur tomato and onion salad out of being a good "foreign citizen" if you know what I mean, my plate was dished for me and then I had to eat something.... I thought that the bulgur salad would be the least damage. At least I could skip the cakes etc.

SUPPER was out with my family and it was a difficult choice for me. I decided on 6 chicken wings. They were just fried without a coating.

Today was sure not the best Low Carb day. I think tomorrow I want to eat more vegetables and salads. My body is craving some vegetables. Now its too late here to get eating on what I missed out today ;) This time of year it is hard with all the functions going on to stay on track....... I'm doing my best to stay on track.

ALL ABOUT TODAY: 12 December


The scale is SOLIDLY STANDING...... but I'm persevering I'm not climbing in weight but not loosing either it is a bit up and then down.........!!!!!!!

BREAKFAST this morning was 1 egg fried in olive oil with a sprinkling of cheese and bacon bits.

1T of coconut oil midd morning and about 3 cups of coffee through the day.... WAY TOO MUCH!

LUNCH was the bun in a mug with flaxseed sliced in two with butter, marmite and cheese. Stir fried vegetables cabbage, broccoli and carrots.

Felt like an orange so I had little pieces of orange peel about 2T.

SUPPER was a chicken piece with mayonnaise and broccoli.

Not such an exciting day food wise but we had people over and I had to host and had to prevent myself from eating the absolutely divine Korean noodles ETC!!!!!!!;D

ALL ABOUT TODAY: 11 December


BREAKFAST this morning was a 2 egg omelette in the microwave with a bit of ground chicken left over from supper last night, tomato, cucumber, sprinkle of cheese.... COFFEE AND CREAM!

Mid morning I had cucumber, red cabbage and carrot spears dipped into a ranch dressing for a snack.

And today I had way toooooo much coffee about 4 mugs! It is bitter cold and snowing very unusual for our city.

LUNCH was 3 bowls of cauliflower, green onion, bacon bits, onion, garlic, and parmesan soup. Was so delicious.

Had a T of coconut oil midd afternoon.

SUPPER was 4 miniature hamburger patties with eggplant baked in the oven with olive oil and lettuce as the crunch salad.

Looking back today I did great on the carbs not so much fat and I think too little protein so supper was more heavier on protein.

ALL ABOUT TODAY: 10 December


This is probably often how we feel after a CHEAT MEAL!!!!!!! ;D

Today I started looking more into the food that I eat and how much protein it has. All my proteins today came to 123g. For me to be able to loose the kilograms I have to keep my proteins under 110g and my carb count under 20g. I do not count my carbs because I try to eat as little of it as I can. I was surprised today when I looked up some innocent vegetables like eggplant that has 6 carbs for one cup...... that is high. I think like we all know the secret is to keep full with the low carb vegetables like cucumber, lettuce, cabbage, broccoli, green beans etc. Not my favorite but hey there is always a price to pay to look good ;)

BREAKFAST was half an avocado pear with a tin of tuna and mayonnaise.

LUNCH was with a group of friends at our home. I turned out to eat shredded cucumber with spicy sausage chopped into my salad dressed with mayonnaise. Won't say what everyone else had......

Midd afternoon I had 2T of coconut oil and 1 1/2T of grated cheese for a snack.

I had a chicken fillet late afternoon with a bit of butter.

SUPPER is going to be mexican food  with salad and tortillas for my family. As I had my chicken late afternoon I just made up a salad of lettuce, tomato, cucumber, ghurkins and a slight sprinkle of feta cheese for me.

The little bits of that and this the last while is not helping my weight to come down. Making a new commitment to try to loose some more weight before Christmas but first getting back to where I was.........

I'm not doing too well exercising. It is not something I really enjoy doing... it comes purely out of discipline. The weather is cold and rainy outside..... I know the excuses can go on and on. I made peace that in the winter I play polar bear and stay inside...... ;D

ALL ABOUT TODAY: 9 December

Just got home!

Today was a full BLUE MONDAY in every color. I am a home schooling mom...... today was a hard day and I must say after many years of home schooling I was ready today to throw in the towel....... Tomorrow morning the sun comes up again! ;D

I just saw a new side of my eating..... Out of frustration today I just grabbed a chocolate cookie and ate half of it..... Wow food is for sure a comfort for me..... I have a long way to go still...... As I always say a good time to look at where I have come from.....

BREAKFAST was two eggs with feta cheese, tomato, cucumber, coffee and cream.

LUNCH was half an avocado pear with salt and pepper, 2 Turkish ground meat kebabs left overs from the barbeque yesterday and a bit of chicken with salad and mayonnaise.

I had a bit of beef jerky a friend dropped off here cleaning out their pantry leaving..... I just love that stuff!

SUPPER was a bit of a mixup. I attended a ladies event and had to take something. It is really hard taking something low carb with for a crowd and stay within budget. I had to make the best of what ever food was there and stay with Low Carb eating....I had a few stuffed mushrooms, carrot, cucumber and pepper sticks dipped into ranch dressing and a decaf coffee with peppermint cream. Was a big treat.

Today counting my proteins  by grams still seemed very confusing as different websites have different numbers. I wrote out a list of proteins I eat regularly and hoping tomorrow to get more into the go of things.

ALL ABOUT TODAY: 8 December


BREAKFAST on this lovely Sunday was earlier than what I have planned...... THE DOG wanted to go out and Mama Bear got up and then just stayed up...

I made 2 scrambled eggs with spinach, cheese, coffee and cream.

I had two more little cups of coffee and cream through the morning.

LUNCH was 2 bowls of the chicken, mushroom and eggplant soup, leftover from earlier this week. Now its done! This is one problem with a pot of Low carb soup.... I HAVE TO EAT IT ALL my family is not much into soup.

SUPPER was midd afternoon a lovely barbeque as a family. I had a chicken fillet and one Turkish ground meat kebab with oven roasted cauliflower, olive oil and garlic. Enjoyed some tomato, cucumber and ghurkin salad.

Had a low carb hot chocolate late afternoon. Was so yum in this cold weather.

Was a good day food wise. I'm looking forward to see what the scale will say tomorrow morning. I have had some time this weekend to read up more about the art of Low Carb eating and weight loss. I think I might eat too much protein at a time. Most sites says to eat 6 ounces/170g of protein a day. I have a little kitchen scale will be looking into this tomorrow.

ALL ABOUT TODAY: 7 Decemer





Just got home after a total THANKSGIVING meal today! Food was everywhere and the desserts to die for!  ;D

BREAKFAST was half an avocado pear with salt and pepper. Coffee and I had cream! I had two fried eggs with cheese.

At my friends house late morning there were deviled stuffed egg and I enjoyed a few fully. I also had a few raw green beans I was getting it ready to put in a dish.  I was  getting hungry and the other treats really was tempting so I thought the beans would be a good high fiber filling snack. I had another coffee late morning.

LUNCH AND SUPPER was at about 3 in the afternoon. I had a scoop coleslaw, a t of cranberry jam, green salad with tomato and cucumber with lots of lettuce, turkey slices and a bit of chicken, a bit of beet. I can say honestly I had no dessert. Wow it was my favorites out there apple pie, pumpkin pie, cheesecake, chocolate mousse cake etc.

I had whipped cream in my coffee and slowly sat enjoying every sip. Afterwards found out that the whip cream had a bit of sugar in it..... hoping that it will not make too much of an influence on my weight.

It was difficult being with some of my favorite people in the world enjoying great food together..... I was so tempted. I realized how much of a social eater I am! Also it was so freeing to not enjoy the high carb food and desserts and enjoy my meal anyway. I have so much hope for the Low Carb way of eating becoming a lifestyle for me...... yes it is not easy but possible!

ALL ABOUT TODAY: 6 December



I have lost another 500g hoping to break my lowest point tomorrow morning. It would just be great!
I really miss cheese and a dot of cream in my coffee. I am just again convinced about the the reality of Low Carb - it does work if you stick to the basics....... AND THIS IS A LESSON FOR ME!

Talking about it: Our family is going to visit friends tomorrow to attend their Thanksgiving Celebration....... MHAW here was asked to bring a chocolate mousse cake and starters...... Oh wow! I would have to have a really good breakfast to keep me going until the turkey meal AND pumpkin pie and cheese cake - and my friend knows about baking those.....  I'm going to do my best to stay LOW CARB!

BREAKFAST today was a treat from my daughter she made me a two egg omelette wrapped in lettuce leafs and off course COFFEE.

Midd morning I had half an avocado with salt and lots of black pepper.

Had a small cup of coffee again late morning.

LUNCH was 2 bowls of left over Chicken Vegetable soup from last night. Was so good. Had a few sliced of tomato and cucumber.

Was out all afternoon so I didn't get into any food trouble :)

SUPPER was a piece of chicken with lots of mayo and stir fried broccoli.

ALL ABOUT TODAY: 5 December


TO EAT ALIVE! This is my son and his cute dog!

Nothing fancy on the scale but still cutting out cheese and all dairy.

BREAKFAST was 2 eggs with cucumber circles and coffee.

Midd morning I had half an avocado with salt and pepper with about 4 big lettuce leafs.

LUNCH was left over stir fried cauliflower from last night heated up in a pan with a tin of tuna. Was so good.

I had a Low Carb hot chocolate: 1T cacao powder, 1t coffee creamer(couldnt find anything about dairy on the container) and hot water. Wasnt so nice but atleast satisfying.

SUPPER will be a thick vegetable chicken soup. I went to the local fruit and vegetable bazaar and got the nicest vegetables. I added in the soup a chicken breast, onion mushrooms, green peppers, cauliflower and chopped eggplant with 3 chicken stock cubes. It smells divine! Will probably have two bowls of this. ;)

I find myself constantly looking for something to eat. The weather is really cold today I don't think a really cold house helps either with not having an appetite.

ALL ABOUT TODAY: 4 December


Was down a kilogram on the scale this morning! I'm not getting to excited about this because it is the naughty kilogram I picked up over the last two weeks. I will get excited once it drops under my hanging lowest point of 69.8! Aiming for that this week.
Cutting out all dairy and cutting back on coffee only 3 mini mugs of coffee a day!

BREAKFAST was 2 eggs fried with slices of cucumber on the side.

Midd morning I had 1T of coconut oil, half an avocado pear and 1 hamburger patty.

LUNCH was a small chicken fillet with broccoli.

Had 1T of coconut oil for a lovely snack midd afternoon :)

I got a great walk in today looking for Christmas material.

SUPPER will be fried cauliflower with lots of garlic topped off with Spagetti Bolognaise tomato meat sauce.

Tomorrow morning on the scale will really tell if cheese an cream was holding me back.

ALL ABOUT TODAY: 3 December


HHMMMMMM not a good day on the scale...... I was up and not coming down..... I have been looking over the last few days on what I have eaten. I think some carbs creeped in. The pickles in the salad last night had SUGAR in them..... I think I have been enjoying tooooo many coffees with CREAM...... Maybe my portions is just to big...I'm definitely not eating not enough. Rather the other way around ;)

So today is back to basics. I'm cutting out all dairy for a week and see if that makes a difference. Also cutting back on coffee and just enjoying hot water in a mug (I do not have a love relationship with herbal teas).

BREAKFAST was 2 eggs fried with tomato and cucumber slices on the side. JUST COFFEE!

I had half an avocado pear with salt and pepper and 1T of coconut oil midd morning of and half a hamburger  meat patti.

LUNCH was delightfully different. I stir fried onion and mushroom and stirred in a tin of tuna. WAs very filling and kept me full for hours.

We had an event at our home.... I stayed strong and only had only half a mug of coffee.

SUPPER was a chicken fillet topped with red pepper flake spicing and mayonnaise with a mixed salad.

Had 1T of coconut oil for dessert :)

Hoping to see a breakthrough before CHRISTMAS!!!!!!!!!!!

Woooooo I really missed the cream in my coffee today..... AND CHEESE! Hoping to see a difference on the scale tomorrow morning.

ALL ABOUT TODAY: 2 December


A real MONDAY!

BREAKFAST was 2 fried eggs with feta cheese and cucumber, coffee and cream.

Midd morning was half an avocado with salt and pepper, 1T of coconut oil

LUNCH was a hearty chicken soup, was not enough..... I had 3 Turkish kebabs with mayonnaise. I cleaned the house and needed all the help I could get so I had 2 cubes of dark chocolate.

Some more coffee and cream midd afternoon.

SUPPER was a meal with guests. I made chinese noodles with chicken, broccoli and peanuts. Realized at the end it was not going to work for me to pick out what I can eat from the meal. I got up from the table and cooked 3 Turkish kebabs and enjoyed it with the mix salad on the table and baked eggplant circles. Turned out to be a good meal for me too.

ALL ABOUT TODAY: 1 December


Hmf the conversation in the car on the way to church this morning ended in my husband commenting and asking if I have gained some weight?????????? You can imagine my response....... :D Anyway I did not gain just fluctuating up to a kilogram up and down. Tomorrow morning will be the big test!!!!!!! I must add that I have been craving all the great food, cake and pies laying around....... Making a choice to stand strong and keep my goal of loosing some more weight in sight.....

BREAKFAST was the bun in a mug without the flaxseed with 2 fried eggs topped off with cheese, coffee and cream. Was such a satisfying breakfast. Loved it.

We got home at 16h30 this afternoon. There were great snacks available at church but off course nothing good for Low Carb. I did have a glass of Turkish tea to help me through.

SUPPER was left over turkey meat strips with mayonnaise and and the cauliflower mock potato salad. It is really cold outside and I might just go and make myself the Low Carb Hot chocolate for a treat.

Wow I do find it hard during this season to avoid eating all the great food laying around. At every place and event there is HIGH CARB AND SUGARY things. I have to keep reminding myself that I made a choice to push through until I weigh 65 kilogram.
